- Strawberries: Infuse a natural sweetness and a vibrant flavor. Strawberries are good for Keto because they also have high levels of vitamin C, manganese, vitamin B9, potassium and other vitamins and minerals associated health benefits.
- Sweetener: A keto-friendly sweetener is essential to achieve the desired sweetness without the carbs. A powdered sweetener works better than a granular sweetener in the recipe. But monk fruit or stevia liquid extracts are good options too. You can also use vanilla flavored sweetener extract to eliminate the need for vanilla extract.

Step-by-Step Recipe
Ingredients
- 1/2 cup strawberries, fresh or frozen (72 g/ 2.5 oz)
- 3/4 cup cream cheese, softened (150 g/ 5.3 oz)
- 1/4 cup butter or coconut oil, softened (57 g/ 2 oz)
- 2 tbsp powdered Erythritol or Swerve (20 g/ 0.7 oz) or 10-15 drops liquid stevia
- 1 vanilla bean or 1 tbsp sugar-free vanilla extract
Instructions
- Soften Ingredients: Place the cream cheese and butter cut into small pieces in to a mixing bowl. Leave at room temperature for 30-60 minutes until softened. Make sure the butter is softened, otherwise it will be difficult to mix and achieve a smooth texture. Do not microwave the butter - the mixture needs to stay firm. Let cream cheese, strawberries, and butter sit at room temperature until softened, about 1 hour. Then microwave cream cheese in small bowl until very soft and pliable (Note 4), about 20 seconds.
- Puree Strawberries: Meanwhile, wash the strawberries and remove the green parts. Place them into a bowl and mash using a fork or place in a blender for a smooth texture. Puree the berries before adding them to the cream cheese. Blend strawberries until pureed (Note 5).
- Combine Ingredients: Add the powdered Erythritol (or stevia), vanilla extract and mix well. Before you mix the strawberries with the remaining ingredients, make sure they have reached room temperature. Add to the bowl with softened butter and cream cheese. Add all of the ingredients into a mixing bowl.
- Mix Thoroughly: Use a hand whisk or food processor and mix until well combined. To make cleanup easier, all the ingredients can be pureed together in the food processor or blender. Add all the ingredients to the bowl of a food processor and blend. Scrape down the sides of the bowl and continue mixing until everything is well combined. A food processor is recommended. But, if you don’t have a food processor, don’t let that stop you from making them. You can use a large blender like this one instead.
- Mold and Freeze: Spoon the mixture into small muffin silicon molds or candy molds. Using a cookie scooper, add the batter into 24 silicone mini muffin molds or other small fat bomb molds that you have on hand. Any shaped mold can be used, but the nutritional data was calculated based on 18 fat bombs. Place in the freezer for about 2 hours or until set. Freeze for 1-2 hours or until they are completely set. Once you’ve put the batter into the molds, freeze it for at least 2 hours to that it is completely set.
- Serve and Store: When done, remove the fat bombs from the molds and place into a container. These fat bombs should be enjoyed frozen, as a convenient snack or as a bite-sized dessert after dinner. Keep the finished fat bombs in the freezer for long-term storage. Once they are completely frozen solid, you can transfer them to a freezer-safe resealable plastic bag and keep them in the freezer.
Tips for Perfection
- Let your cream cheese come to room temperature before you start mixing. This makes it much easier to get a nice smooth batter. It takes about an hour for cream cheese to come to room temperature after you take it out of the refrigerator.
- Ensure all ingredients are fully mixed.
- Silicone molds are convenient because you can easily invert them and pop out the fat bombs after they’re frozen. You can also use any other mold you may have on hand, or even ice cube trays, styrofoam egg cartons, or mini muffin wrappers. You can even put them on a baking sheet using a piping bag.
- I prefer to stash my fat bombs in the freezer so they stay firm (and last longer!). Storing these healthy snacks in the freezer makes them a bit firmer and extends their life.
Sweetener Selection
I use Swerve confectioners’ sweetener. Wholesome Yum’s Besti Powdered Allulose is my absolute favorite allulose to use! It has perfect texture and far exceeds anything else I’ve ever tried. In this recipe, I used Allulose Powdered by Besti, a new line of natural sugar-free sweeteners that uses all high quality, non GMO ingredients. Allulose tastes and dissolves just like traditional powdered sugar, but it has 0 calories, 0 net carbs and is 0 on the glycemic index and it has no cooling effect like some sugar alternatives. If you don’t have Allulose, you can certainly substitute it with Swerve Confectioners.
Strawberry Considerations
Carbs in strawberries come mainly from fiber. They have natural sugar but have a fairly low GI and should not cause a large spike in blood sugar. For one whole cup of strawberries, there’re about 9 net grams of carbs. This entire recipe calls for only 2/3 cup. Be sure to measure your strawberries carefully.
Customization Options
It’s really hard to beat the flavors in these Strawberry Keto Cheesecake Fat Bombs, but you can substitute the strawberries with another berry of your choice. Blackberries, blueberries and raspberries are all great low carb options. You’ll want to double check the carb count of the berries you opt for and adjust your macros accordingly.
