- Steak
- Potatoes
- Ghee
- Sea salt
- Pepper
- Garlic
- Rosemary
- Parsley
Instructions:
- Heat a large heavy skillet over medium high heat and add 2 tablespoons of the ghee.
- Once hot, add the potatoes and sprinkle all over with sea salt and pepper.
- Cook about 2 minutes, stir, then cook another 4 minutes, stirring occasionally to evenly brown, until golden brown and tender.
- During the last minute of cooking the potatoes, push them to the size and add the garlic, rosemary and parsley.
- Add the remaining 2 tablespoons of ghee. You might need to cook the steak in batches to avoid overcrowding depending on the size of your skillet.

Instructions:
- Clean steak and cut off any “silver skin” on the fat layer that may remain for a more easily chewable bite. Place steak in a baking dish or Ziplock bag. Combine all other ingredients for marinade in a small mixing bowl and whisk, pour over the steak and make sure it’s fully coated.
- Meanwhile, combine all pico de gallo ingredients in a small mixing bowl, and let sit for the flavors to meld. Store in the refrigerator until ready to use. Also, prepare the avocado dressing at this time by combining all ingredients in a food processor or blender. Add water as needed to loosen the dressing.
- Heat a grill or cast iron skillet over high heat, add olive oil and once shimmering, place the marinated steak (discard the extra marinade). Grill on each side for approx. 6 minutes for medium-rare or more if you’d like it well-done (depending on thickness of steak).
- In a skillet, add ghee or oil over medium-low heat. Add cauliflower rice (fresh or frozen) and season with seasonings. Mix to combine with a wooden spoon and cook for 5-8 minutes until rice is soft. Set aside.
- Add sliced steak over cauliflower rice, drizzle with avocado dressing and optionally garnish with sliced avocado, lime wedges, cilantro, and coconut yogurt.

Ingredients:
- Round steak
- Coconut aminos
- Garlic
- Fresh grated ginger
- Olive oil or coconut oil
- Green pepper
- Celery
- Green onions
- Arrowroot powder
- Water
- Baby carrots
- Cauliflower rice
- Onion
- Eggs
- Sesame oil
Instructions:
- Cut the round steak across the grain into thin strips about 1/4” thick. Combine the coconut aminos, garlic, and ginger then pour over the beef, either in a large bowl or sealable bag. Set the meat aside for a few minutes to soak up the marinade while you chop the vegetables.

- Preheat oven to 425 F and line a baking sheet with parchment paper. Toss the sweet potatoes with 1/4 tsp sea salt and 1 tsp avocado oil. Place in the oven and roast until tender, about 30 minutes.
- Meanwhile, heat 1 tsp of the oil in a pan on the stove over medium heat. Rub the remaining teaspoon of avocado oil over the steak, sprinkle with the remaining 1/2 sea salt, and if desired, sprinkle some herbs like rosemary, oregano, and/or thyme over each side as well.
- Once the oil in the pan is hot, place the steak into the pan and leave for 5 minutes without disturbing, then flip and cook for another 5 minutes.
- Check the temperature with an instant-read thermometer and remove it from the pan when done. (130 F for rare, 135 for medium-rare, 145 for medium and 155 for well done). Cover with some aluminum foil or a kitchen towel and let rest while you go onto the next step.
- Put the cauliflower rice directly into the pan where the steak was and stir occasionally, scraping up the brown bits from the bottom of the pan, until done, about 5 minutes. The rice will turn brown and get a delicious nutty flavor.
- Assemble the bowl. Sprinkle the lime juice and extra sea salt over the avocado.

This steak frites recipe will wow anyone in your life. Sounds like a complicated dish, but quite the opposite. I will forever be a steak and a potatoes kind of girl -which is exactly what this steak frites recipe is. This dish always sounds super fancy, but it really is pretty simple to make!
Ingredients:
- Rib eye or New York strip steak
- Kosher salt
- Fresh ground black pepper
- Russet potatoes
- Duck fat
- Minced garlic
Instructions:
- Soak your russet potatoes in cold water for at least 30 minutes. It is crucial that you pat your potatoes as dry as possible. You don’t want the potatoes to steam in the oven.
- Preheat oven to 375F. Scrub potatoes clean or peel the skin off. Cut into 1/4 inch thick french fries.
- Meanwhile, melt duck fat with minced garlic. Roast for 20 minutes then toss the potatoes.
- Preheat a cast iron skillet over medium high heat. Add the steak to the skillet and sear one each side for 3-4 minutes per side for medium-rare steak.

Steak Salad
I also love that this steak was just MADE for salads, since once summer hits I can’t get enough fresh greens and salads. My favorite salad EVER (at the moment) involves spinach, flank steak, avocado, cherry tomatoes, sweet potato fries and kalamata olives.
Marinated Flank Steak
This marinated flank steak is pretty straightforward - I am by no means a steak expert so I’m quite certain anyone can do this and succeed! Once ready to grill (or cook in your cast iron skillet) you shake off the excess marinade and go for it. The marinade itself can actually be boiled into a sweet sauce if you’re so inclined, otherwise the steak is truly delicious on its own.

Instructions:
- Score the steak all over with a knife, place in a large bowl and pour all the marinade over the steak, turning to completely coat.
- Once ready to grill, preheated grill to medium high heat. Remove most of the marinade from steak, leaving a very thin coating. Place the steak on the hot grill and turn after the first side is browned with visible grill lines, repeat on the second side.
- Lower the heat to medium, cover the grill and continue to cook until steak is done to preference, turning once.
- Once done, remove the stead to a large platter and loosely cover with aluminum foil for 5-10 minutes to allow juices to distribute. Then, using a fork and long sharp knife cut the steak against the grain (opposite direction that the lines of the meat run in) in 1/2 inch slices on a slight angle.
- To turn marinade into a sauce, bring it to a full boil in a small saucepan and allow to boil/strong simmer for 5-10 minutes.
