How to Make Keto Alice Springs Chicken: Step-by-Step Instructions
This low carb chicken recipe is super easy to make! Follow these simple directions, and you can’t go wrong!
- Prepare the Chicken: Preheat the oven to 350°. Rub Seasoning Salt on chicken breasts and place on a plate and put them in the fridge while you prepare everything else. Remove the chicken from the fridge, and using the same pan you cooked the bacon in sear the chicken over medium heat. Cook the chicken breasts for 4 minutes on each side. Start with dry chicken. Pat the chicken dry with a paper towel to remove excess moisture. This will help the seasonings stick better. Also, per USDA’s recommendation, don’t bother washing the chicken. Add to a hot pan. If you want that golden crust on the chicken, ensure the pan and oil are hot before adding chicken. Cooking time varies. The cook time will depend on the thickness of the chicken breast.
- Make the Keto Honey Mustard Sauce: In a medium sized bowl mix 1/2 cup mayonnaise, 1/2 cup yellow mustard, 1 teaspoon swerve and 2 tablespoons onion flakes. Mix everything until it forms a sauce and set aside. In a rush and don’t want to make your own sauce? Try to marinate chicken for a couple hours.
- Cook the Bacon and Mushrooms: Slice each piece of bacon in half and cook on medium high heat until crispy. Remove from the pan and set aside. Wash and slice your mushrooms if needed and set aside. Using the same pan you cooked the bacon in sear the chicken over medium heat.
- Assemble and Bake: Get a 9×13 pan, spray with nonstick spray and pour a small layer of the sauce on the bottom of the dish. Place the chicken in the dish and top with the bacon, then the mushrooms, then the cheese, and then the remainder of the sauce. Bake Alice Springs Chicken at 350° for about 15 minutes. Check the chicken to make sure it is at 165° before removing it from the oven.
Tips for the Perfect Keto Alice Springs Chicken
- Don't overcook the chicken: Use a meat thermometer to ensure the chicken reaches an internal temperature of 165°F (74°C). Overcooked chicken will be dry and tough.
- Get creative with toppings: Feel free to add other keto-friendly toppings like chopped green onions, diced tomatoes, or a sprinkle of paprika.
- Make it ahead: You can prepare the chicken and sauce ahead of time and assemble the dish just before baking.
