Have you heard? Even peaches can be part of a healthy low-carb diet! This keto peach cobbler in a mug recipe offers a single-serving dessert that's quick, easy, and satisfying. Perfect for those following a ketogenic lifestyle or anyone looking for a guilt-free treat, this recipe combines the comforting flavors of peach cobbler with low-carb ingredients.

Why a Mug Cobbler?

The beauty of a mug cobbler lies in its simplicity and speed. There’s no need to preheat the oven for a mere fistful of fruity biscuit. Especially in the heat of summer. It literally takes just a few minutes from start to finish. Mug cakes’ roots trace back to the invention of the microwave in 1946, which made it easy to cook things in a matter of minutes. In the decades following, people began experimenting with what they could microwave and that’s when the idea of a single-serving cake made in a mug emerged. The mug cake really rose in popularity in the 2000’s, where tutorial videos showcasing easy-to-make recipes brought the trend to kitchens everywhere. The idea of making a dessert in a mug was not only practical but also allowed you to experiment with flavors and ingredients!

Keto-Friendly Ingredients

This recipe cleverly substitutes traditional high-carb ingredients with keto-friendly alternatives. Instead of flour and sugar, it utilizes almond flour and low-carb sweeteners:

  • Peaches: Yes, even peaches can be part of a healthy low-carb diet!
  • Almond Flour: A grain-free and low-carb alternative to traditional flour.
  • Low-Carb Sweetener: Sukrin Gold, Erythritol, or Swerve are excellent choices to provide sweetness without the blood sugar spike.
  • Butter or Coconut Oil: Adds richness and flavor to both the peach base and the crumble topping.

  5. Bake the peach base for 20 minutes, or until the peaches are soft.
  6. Add the crumble topping on top of the peaches.
  7. Place back in the oven for 5 to 8 minutes, or until the topping is golden brown.
  8. Optionally, dust with powdered low-carb sweetener and cinnamon.
  9. Let the cobbler cool slightly, as it will crisp up as it cools.
  10. Serve with your choice of topping: whipped cream, coconut cream, clotted cream, mascarpone cream, sour cream, or full-fat yogurt.

Microwave Method:

  1. In a small microwavable bowl, combine peaches, 2 tbsp. brown sugar substitute, and ½ tsp. cinnamon.

  5. In a small mixing bowl mix almond flour, milk, ½ tsp. cinnamon, granulated sugar substitute, extract, baking powder, and salt.
  6. Spoon mixture over peaches.

  8. Remove from microwave and immediately sprinkle 1 tbsp. almond flour on top.
  9. Let cool slightly and enjoy.

Tips and Variations

  • Fruit Alternatives: No worries-there are plenty of alternatives you can try in your microwave mug cake! Instead of peaches, feel free to get creative by substituting in any other fruit. We recommend you try DOLE® Mango Slices, or DOLE® Pineapple Slices for a tropical twist. Or, try using DOLE® Frozen Blueberries for a berry option. If using frozen fruit, it’s a good idea to microwave them for about 30 seconds before adding them to the mug to ensure they’re thawed.
  • Protein Boost: For a high protein peach cobbler mug cake, consider adding a scoop of protein powder. The original recipe uses Dymatize 100% Whey protein (vanilla cupcake flavor).
  • Fat Reduction: If you wanted to reduce the fat in this peach cobbler mug cake, you could swap the butter for something like unsweetened apple sauce, an egg yolk, or additional peaches.
  • Sweetener Options: Any sticky sweetener like honey or another sugar free syrup should work here.
  • Serving Suggestions: You can keep it simple and enjoy as is - or add a scoop of vanilla ice cream or whipped cream on top. I enjoy this cobbler with a generous dollop of clotted cream which is very creamy and has the most amazing texture. If you can't find clotted cream, mascarpone cream will be the closest alternative. You can also use whipped cream, sour cream, full-fat yogurt, coconut yogurt or coconut cream.
  • Spice it Up: Consider adding a pinch of cardamom to the dry ingredients for a warm, aromatic flavor.

The Magic of Microwaves and Mug Cakes

Microwaves, surprisingly, bake up a gorgeous sponge and bubbles up the brown sugar in a way that causes it to transform into toffee-like deliciousness, not to mention blanket the juicy white-fleshed peaches in a duvet of caramel.
