- Raspberry Cream Cheese French Toast: More like a scrumptious dessert than a main dish, this rich French toast is topped with a tangy raspberry sauce and a vanilla sauce that includes ice cream. I cut the croissants into shapes with a cookie cutter for my 4-year-old grandson, Patrick.

Here's a detailed example of a healthy and flavorful griddle recipe:
Ingredients:
- Boneless, skinless chicken breasts
- Chipotle peppers in adobo sauce
- Jalapeños
- Lime juice
- Orange juice
- Olive oil
- Chili powder

- Cotija cheese

- Marinate the Chicken: Cut the chicken breasts in half lengthwise and pound out any thicker areas. Blend chipotle peppers, jalapeños, lime juice, orange juice, olive oil, chili powder, cumin, garlic powder, onion powder, and salt in a blender or food processor to create a thick marinade. Add the marinade and chicken to a zip-top bag and refrigerate for at least 2 hours.
- Prepare the Corn Salad: Combine drained black beans, Southwest style corn, diced jalapeños, lime juice, cilantro, and Cotija cheese in a bowl.
- Make the Avocado Ranch Dressing: Blend ranch dressing, avocado, lime juice, and cilantro until smooth. Refrigerate until ready to serve.
- Cook the Chicken: Preheat the griddle to 375-400 degrees F. Apply a thin layer of cooking oil. Cook the chicken breasts on the first side until a nice crust develops (about 5 minutes). Flip and continue to cook until the internal temperature reaches 165 degrees F. Transfer to a cutting board to rest.
- Sauté the Vegetables: While the chicken is cooking, sauté sliced bell peppers and onions on the griddle until tender-crisp.
- Toast the Corn: Add drained Southwest corn to the heated oiled griddle in a thin layer. Allow the corn to char and toast a bit (about 4-5 minutes).
- Assemble the Bowls: Start with a bed of chopped romaine lettuce (or cooked rice). Add the black bean and corn salad and the sautéed peppers and onions. Top with sliced chicken and the avocado ranch dressing.
