Aurum Food & Wine Breckenridge offers a seasonal New American culinary experience in an elegantly casual dining space. This restaurant offers innovative New American, farm-to-table fare with unique cocktails & craft beer, topped with a wine list creatively sorted by music genres! The Steamboat Springs original Aurum Food & Wine is all about honest local food. The seasonally shaped menu is rich with Colorado-sourced goods that include Uncle John’s Farm Stand corn and tomatoes, Western Slope apples and peaches, Corner Post Ranch pasture-raised pork, and microgreens from the modest garden down the street at Hearthstone. Look to the shared plates for Colorado pork, lamb and beef meatballs and a strawberry and roasted beet salad. Save space for the Western Slope-sourced apple bread pudding with salted caramel and bourbon butterscotch ice cream.

Rootstalk

Rootstalk is home to James Beard Award-Winning Chef, Matt Vawter. The restaurant is located right on Main Street in Breckenridge. Rootstalk offers a culinary experience rooted in the farm-to-table philosophy. Located in a charming historic building, the restaurant features a seasonally evolving menu that showcases the freshest local ingredients, from a foie gras parfait with local Palisade stone fruit to an agnolotti featuring succulent Olathe Sweet Corn. From innovative small plates to hearty mains, each dish at Rootstalk celebrates the rich flavors of Colorado’s seasonal bounty, providing a dining experience that is both sophisticated, delightfully rustic, and curated by Breckenridge’s newly accoladed James Beard Award Winning Chef, Matt Vawter. Rootstalk serves dinner seven nights a week. We invite you to dress according to individual comfort for the experience. Purchase a physical gift card in-person at Rootstalk or conveniently buy an e-gift card online. Colorado law prohibits customers from bringing their own wine or other alcoholic beverages into restaurants. Après runs daily from 4:00-5:00pm offering a small menu of food and drink offerings in addition to our normal a la carte or Chef’s 7 Course Tasting menus. To avoid a cancellation fee, please provide us with a minimum of 24 hours' notice if you need to cancel your reservation. Rootstalk does not have private parking for our guests. We recommend parking in the East Sawmill Lot located to the west of our location which is free after 5pm. We only accept reservations in the evening - at any other time of day, please phone ahead.

Twist

The outdoor patio at Twist is one of the best dinner spots during the summertime in Breckenridge. Twist serves up Colorado spins on American comfort food in a cozy mountain cottage perfect for lingering happy hours. Owner and chef Matt Fackler is a restaurant vet with a heavy finger on the Western Slope’s autumn crops. Mixed greens are peppered with grilled Palisade peaches while the Caesar’s baby romaine mingles with Palisade squash noodles. Try the smoked trout sliders and a side of Olathe sweet corn with goat chevre and chives. Ember

Ember chef and owner Scotty Boshaw dazzles and delights with an ever changing and always inspired poetic dinner menu. His artful approach pulls from cultures and traditions across the map, delivering seasonal eats that include pig ear French fries, lamb cheeks, shrimp corn dogs, lobster biscuits and gravy, and salt and lime cured crickets. Expect global dishes, gastronomic experimentation and unheard of texture marriages. Hearthstone

Settle in for a classic Breckenridge treat at Hearthstone in the warmly decorated 125-year-old Victorian Kaiser home. Chef Michael Halpin has earned a dedicated following for sourcing the finest naturally raised beef and game, sustainably caught seafood and in-season Colorado produce. Rocky Mountain menu highlights span roasted quail with Palisade peach stuffing and a plum and fig gastrique to a popular blackberry elk filet with Colorado’s Jumpin’ Good Goat cheese farro risotto.
