- 250 ML (1 can) salmon (we used Raj’s Dad’s line caught canned salmon. Also tried his smoked salmon)
- 1 cup chopped greens (kale, spinach, bok choy, swiss chard, whatever you prefer)
- 1/2 cup sliced mushrooms
- 1 tbsp chopped dill (we used fresh dill)
- 1/2 tsp salt
- 1 tomato sliced
- 6 eggs
- 1/4 cup aged cheddar, (optional)
Instructions:
- Pre-heat oven to 350 F.
- Press the canned salmon into the bottom of your oven safe dish or skillet.
- Layer in greens and sliced mushrooms.
- Break eggs into a bowl and whisk, adding salt and pouring overtop of the layers, trying to get an even distribution of eggs.
- Lay tomato slices around the edge.
- Sprinkle optional cheddar over top and finally the dill.
- Pop in the oven and bake for 35 minutes.

- Using Fresh Salmon: I’ve made this using raw salmon that I’ve pulsed in my food processor. It’s just not as good. I actually prefer using canned salmon. I think the canned salmon is juicier from being packed in water. You could, for sure, use leftover cooked salmon to make these salmon burgers. For this recipe amount, you would need 18 ounces worth. Roughly 1.5 cups cooked and finely chopped salmon.
- Nut-Free/Almond Flour Substitute: If you need these keto salmon cakes to be nut-free, you can use pork rind panko!
- Dried Herbs: In a pinch, you could use dried herbs.

- Mayonnaise
- Fresh lemon
- Fresh jalapenos
- Egg

Instructions
- Add the canned salmon to a medium bowl and if it has bones and skin, go through it with your hands and take them all out.
- Mince the jalapeno pepper and green onions into very finely chopped pieces. If you don’t want any heat from the jalapeno make sure to clean out the ribs and the seeds. If you want a bit of heat keep the ribs in.
- Form the salmon mixture into 4 patties and place on a plate.
- Heat up a large non-stick skillet to medium high heat. Add the butter and olive oil and once hot, turn the heat to medium heat and carefully place the salmon cakes in the hot skillet.
- Cook for about 4 minutes then flip patties and do the other side for another 4 minutes. Cooking time may vary depending on the size of your patties.
Tips
- It’s much easier to use canned salmon without the bones and skin. Of course you can use fresh salmon but it would be much easier if you cook the raw salmon first.
- Also I didn’t use bread crumbs to keep the carbs down and to keep it gluten free but the bread crumbs might make them a bit more sturdy. If you really wanted to you can add bit of almond flour or crushed pork rinds to the mixture.
- You can easily decrease the heat of fresh jalapenos by cutting out the ribs and clearing out the seeds. If you like the heat keep the ribs in . And if you don’t have jalapeños you can just use green or red bell pepper.
- This would be tasty as a salmon salad too all you need to do is eliminate the egg. The lemon zest really brings some brightness to the dish.

These Crispy Keto Salmon Patties are packed with tender salmon, cajun spices and fried until golden brown! I have been working for a while to create really delicious, healthy salmon patties that are low-carb and keto compliant. I’ve finally got it! Lots of recipes use crushed pork rinds in place of bread crumbs, but I have never been a fan of pork rinds so I wanted to find a substitute. The flavor of these crispy keto salmon patties is a bit cajun. The addition of chopped green onions, jalapeño, and Old Bay seasoning adds a nice complex flavor that you will love. - These salmon patties taste best fresh, but they’re still delicious once reheated. If possible, I recommend reheating the salmon patties in a skillet with a little oil to crisp them back up again.
