Ingredients:
- 1 tablespoon butter, melted
- 1 ounce cream cheese
- 1 egg
- 3 tablespoons almond flour
- 1/4 teaspoon baking powder
- Pinch of salt
- Optional: Pinch of onion powder, garlic powder, cinnamon, or your favorite herbs
Instructions:
- Prep your ingredients. Melt the butter if needed by microwaving in intervals of 15 seconds.
- Find a microwave-safe bowl, dish, or mug that will mold your bread batter into the right shape. You can use a mug to make this 90 second keto Bread. For the microwave, I like to use a round ramekin (like this one) that is 4 inches in diameter or a 4 inch x 4 inch microwave safe container. For the ramekin size, I’m using a Le Creuset mini cocotte which is 3 3/4″ diam., 2” high; 8-oz. cap. You may use whatever size you have. A coffee cup also works fine for this. You’ll need a larger mug or container ( with at least a 16 oz capacity).
- Add all ingredients into a mug, ramekin, or another microwavable dish.
- Mix the ingredients together well. Make sure that the mixture is smooth and there are no clumps. Stir thoroughly making sure to get all of the egg, and other ingredients completely mixed. Next, add all of the rest of the ingredients and whisk with a fork. The dough will be very wet.
- Tap on the counter a few times to remove air bubbles.
- Microwave for 75-90 seconds or until the bread is firm. Depending on your microwave, it may be best to start at 60 seconds and then increase the time from there. While this recipe can be cooked in as little as 90 seconds flat, it’s not a good idea to take it out too early. If you microwave the bread for too long, it will become very dry and hard.
- Run a knife along the edge of the bread and remove from your container. Using one of the microwave safe bowls helps for easy removal.
- Slice as needed. When it's finished cooling, you can slice it in half lengthwise to make 2 slices of keto-friendly bread.
- Optionally toast the bread in a pan with a small amount of butter. You’ll be happy note that yes, indeed, you can toast this keto bread. Of course, you can always just take your bread right out of the mug to toast it and then add your favorite keto friendly spread. To remedy this, you can use just an egg white and save the egg yolk for another recipe. You can also use carton egg whites from the grocery store. For that you would need to use 2 tablespoons of the egg whites. This would also result in a bread with less fat and calories and a taste and texture similar to white bread.
