This recipe is very simple, an amazing way to use fresh garden vegetables, and happens to be sugar-free! You do not need any hard to find ingredients or special skills to make this sauce. Simply roast and blend for a delightfully simple tomato sauce that is great on just about anything!

Ingredients:

  • 3 pounds fresh San Marzano tomatoes
  • 1 white onion peeled and quartered
  • 2 heads garlic peeled
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1 1/2 teaspoon kosher salt
  • 1 tablespoon Italian seasoning
  • 1/2 cup dry red wine
  • 1/2 cup beef broth
  • Optional: to cut acidity and make creamier, add 1/4 cup heavy cream

Instructions:

  1. Preheat the oven to 400 degrees F.
  2. Add the fresh San Marzano tomatoes, onion, garlic, olive oil, balsamic vinegar, salt and Italian seasoning.
  3. Roast for 30 minutes, remove from the oven and stir.
  4. Roast an additional 20-30 minutes until it resembles the photos in the pictures and most of the liquid has evaporated.
  5. Remove from the oven and allow the mixture to cool 10 minutes.
  6. Transfer the ingredients to a blender add the red wine and beef broth.
  7. This recipe makes approximately 3 cups of sauce.

Simple Low-Carb Tomato Sauce Recipe

This low-carb tomato sauce recipe takes only minutes to prep- the rest of the time is spent allowing the sauce to simmer into rich, flavorful goodness.

Ingredients:

  • 3-½ cups fresh tomatoes, diced OR 28 oz.
  • 2 tablespoons of olive oil
  • Chopped onions
  • Minced garlic
  • Tomato paste
  • Basil
  • Oregano
  • Salt and pepper
  • 2 tablespoons of butter (vegan butter or more olive oil works well too)

Instructions:

  1. Set a medium saucepan on the stovetop over medium-high heat and warm 2 tablespoons of olive oil.
  2. Add the chopped onions and cook for about 5 minutes to allow them to soften.
  3. Stir in the minced garlic and cook another minute.
  4. Add in the diced tomatoes (with their juices), tomato paste, basil, oregano, and salt and pepper. Stir to combine.
