Robert Hesse, a familiar face from Hell's Kitchen, embarked on a transformative weight loss journey, overcoming years of struggle and achieving remarkable results. His story is one of perseverance, aided by medical intervention and a strong personal motivation. Hesse's experience highlights the challenges of obesity and the potential benefits of bariatric surgery when combined with lifestyle changes.
Hesse's Long Battle with Weight
Hesse openly discussed his lifelong struggle with weight, admitting to trying various methods, "I've done everything to lose weight from fasting, diets, shakes to magic pills and then exercise and diet. It's just been a tough battle." His weight impacted various aspects of his life, leading to uncomfortable moments and a desire for change.
The Decision for Bariatric Surgery
After years of battling his weight, Hesse opted for a surgical solution. He chose to undergo a vertical sleeve gastrectomy performed by Dr. John Ganser at Western Bariatric Institute. At the time of his surgery, Hesse weighed 398 pounds.
Vertical Sleeve Gastrectomy: The Procedure
Vertical sleeve gastrectomy, or "sleeve," is a weight loss procedure that involves removing a significant portion (80% to 85%) of the stomach. This creates a smaller, banana-shaped pouch, restricting the amount of food a person can consume.
Dr. Ganser explained the procedure's effectiveness, stating, "It's very successful. You can ask Robert. It's hard not to lose weight on that. If you eat wrong you'll pay the price. If you eat too much you might throw up." Beyond the physical restriction, the surgery also affects the body's metabolism and hunger mechanisms.

How Sleeve Gastrectomy Works
The vertical sleeve gastrectomy impacts the body in several key ways:
- Reduced Stomach Size: The smaller stomach pouch limits the amount of food that can be eaten at one time, leading to reduced calorie intake.
- Metabolic Changes: The procedure alters metabolism, causing the body to burn more calories.
- Appetite Regulation: It affects the central hunger mechanism, reducing cravings and making individuals feel less hungry. "I think the key way that it works is it changes your metabolism and it also changes how your central hunger mechanism so you look at food differently. You're not as hungry. You don't have the cravings you might have had before surgery. But it raises metabolism so you're burning more calories."
Hesse's Transformation and Results
Following the surgery, Hesse experienced significant weight loss.
- Six Months Post-Surgery (August 1, 2014): Hesse lost 170 lbs, weighing in at 228 lbs. He expressed feeling "amazing" and enjoying life, noting he was down to a 40-42 inch waist and an XXL shirt.
- One Year Post-Surgery (January 15, 2014): Hesse reached 219 pounds.
- Overall Weight Loss (December 10, 2014): Hesse had lost 300 pounds from his highest weight.
Hesse celebrated milestones in his journey, such as fitting comfortably on a plane without an extension belt for the first time, documenting his travels from Reno-Tahoe International Airport to New York City.
He also shared his newfound ability to enjoy activities he previously couldn't, such as riding a roller coaster. "So I’m excited to say after years a lifetime really never riding a roller coaster and everyone knows about that darn test chair for public display to see if you fit. Or you wait in line to be embarrassed to be asked to get off the ride is over for me. Since my surgery with WBI, Dr. Ganser and Curtis I have gotten my freedom back. Because of the sleeve gastrectomy, I have lost more than 100 lbs since Jan 15. And feel amazing! The care and respect from WBI is top notch. Truly my life was saved. Everyday I wake up blessed and full of energy to take the world on. Just got back from SIX FLAGS and rode every ride 6 times and was a kid again fulfilling dreams and wishes and felt a part of the fabric to an outcast."

Motivation Beyond the Kitchen
Despite working as the head chef of the Eldorado buffet, a challenging environment for weight loss, Hesse remained committed to his health goals. He found additional motivation in his son, Aiden. "My son, Aiden is the most important thing in life and if I can't keep up with him in baseball or the shopping mall what's the point? " This desire to actively participate in his son's life fueled his determination to maintain a healthy lifestyle.
Hesse's Message: The Real Work Begins After Surgery
Hesse stressed that bariatric surgery is not a magic bullet, but rather a tool that requires commitment and effort. "I want people to know the real work begins the day after my surgery." He emphasized the importance of adopting healthy habits and making conscious choices to sustain long-term weight loss.
Bariatric Surgery: Considerations and Candidacy
Hesse's story also sheds light on the broader context of bariatric surgery. It's important to note that weight loss surgery is typically considered for individuals who have struggled to lose weight through conventional methods like diet and exercise.
