"What kick-started my weight loss was a combination of a really joyous thing and some massive depression: I lost a restaurant, and I found the love of my life - my wife," he said. "We love dessert, but you can replace a little bit of sugar with vanilla bean or cinnamon and that gives you the illusion of sweetness," said Blais.
  • Chocolate with cocoa: Blais suggests using cocoa or cocoa nibs rather than chocolate. "You know, chocolate is not a sweet ingredient," said Blais. "So if you use cacao or cocoa nibs, that's going to be a great swap."
  • High-fat meats with lean meats: Instead of fatty cuts of steak, Blais recommends opting for leaner options like skirt steak or flank steak, or choosing low-fat turkey or chicken. "Instead of that beefy short rib, which is delicious, a lean cut of meat: a skirt steak, a flank steak, something like that would be a good swap," said Blais.

In March 2024, the chef revealed that he'd signed a deal to more than double his current lineup of restaurants by opening six new locations in Scottsdale, Arizona. These include an Italian-American restaurant, a sushi and Spanish tapas bar, an eatery focused on Southwest-style grilling, a poolside snack spot, and a separate poolside burger joint. Scheduled to debut in fall 2024, these come as a part of a $110 million rebranding of the Hyatt Regency Scottsdale Resort & Spa at Gainey Ranch.
