This wonderful comfort food is great with pasta, mashed potatoes, white rice or brown rice if you're not counting carbs. If you are, try serving over riced or mashed cauliflower. Green pepper may be substituted for red pepper, but this will change the flavor of the final dish a bit. I use jarred, minced garlic (lazy!!). Substitute ground turkey for beef to lighten up a bit. Store leftovers of this cabbage roll casserole in an airtight container or zip top freezer bag. If you are averse to cutting onions, chopped onion is generally available in the frozen vegetable section of the grocery store. Feeling too lazy to cut up a whole cabbage?   • Add all ingredients except cheese to slow cooker. Stir to combine a bit, if you can. Your slow cooker will be very full but will shrink as it cooks 1 - 1.5 lbs ground beef, 1 head cabbage, 15 oz can diced tomatoes, 1 cup onion, 15 oz can tomato sauce, 8 oz can mushrooms, 1 tablespoon Italian seasoning, 1 tablespoon garlic, 1 red pepper
  • Cover and cook on low for 8 or so hours (or 4 hours on high)
  • 15 minutes before serving, add 1 cup (or more!) of shredded cheese to the contents in a slow cooker. Stir and cover to allow cheese to melt1.5 cups shredded cheddar or mozzarella cheese
  • Just prior to serving, top with remaining cheese.
