Decadent Keto Yogurt Cake Recipes: Moist, Delicious, and Diet-Friendly

For those embracing a ketogenic lifestyle, finding satisfying desserts can sometimes feel like a challenge. However, with the right recipe, you can indulge in a delectable cake that aligns with your dietary goals. Keto yogurt cakes are a fantastic option, offering a moist, tender crumb and rich flavor while keeping the carb count low. This article explores various keto yogurt cake recipes, including both chocolate and vanilla variations, along with tips and tricks to ensure baking success.

The Allure of Keto Yogurt Cake

What makes keto yogurt cake stand out from other low-carb desserts? The inclusion of Greek yogurt is the key. Greek yogurt adds extra moisture to the cake, resulting in a tender crumb that many keto cakes lack. The natural acidity in yogurt reacts beautifully with baking powder, further enhancing the cake's texture. Moreover, a slice of keto yogurt cake can contain just over 3 net carbs, making it a guilt-free treat for those watching their carbohydrate intake.

Basic Keto Yogurt Cake Recipe

This recipe provides a foundation for creating a delicious and versatile keto yogurt cake.

Ingredients

  • Eggs
  • Greek yogurt (plain, full-fat with the fewest carbs per 100 grams)
  • Softened unsalted butter
  • Milk of choice
  • Vanilla extract (or other extracts like lemon, orange, or almond)
  • Almond flour (blanched, sifted)
  • Coconut flour (use only if specified, otherwise avoid as it doesn't measure equally with almond flour)
  • Granulated sweetener (Lakanto Monk Fruit recommended for its taste and natural sweetness)
  • Salt (sea salt preferred)
  • Baking powder

Instructions

  1. Prep: Preheat the oven to 350°F (180°C). Grease a loaf pan or bundt pan and line with parchment paper.
  2. Make the Cake Batter: In a large mixing bowl, whisk together the eggs, Greek yogurt, softened butter, milk, and vanilla extract until well combined. Use room temperature ingredients for best results. A hand mixer or stand mixer can be used.
  3. Combine Dry and Wet Ingredients: In a separate bowl, sift together the almond flour, sweetener, salt, and baking powder. Gently fold the dry ingredients into the wet ingredients and mix until just combined. Be careful not to overmix.
  4. Bake: Transfer the cake batter into the prepared pan and bake for 50 minutes, or until a skewer inserted into the center comes out mostly clean. For a bundt cake, bake for 50-60 minutes.
  5. Cool, Frost, and Slice: Remove the cake from the oven and let it cool briefly in the pan, then transfer it to a wire rack to cool completely before frosting. Refrigerate for 30 minutes to allow the frosting to firm up before slicing.

  • Chocolate Ganache: Melt keto-friendly chocolate chips with heavy cream for a rich chocolate ganache.
  • Keto Powdered Sugar Glaze: Combine keto powdered sugar with vanilla extract and milk until the desired texture is achieved.

Tips for Baking the Perfect Keto Yogurt Cake

  • Use Room Temperature Ingredients: This helps the ingredients blend together more easily, resulting in a smoother batter.
  • Sift Almond Flour: Sifting almond flour ensures a finer texture and prevents lumps in the batter.
  • Choose the Right Yogurt: Opt for plain, full-fat Greek yogurt with the fewest carbs per 100 grams.
  • Don't Overmix: Overmixing can result in a tough cake. Mix until the ingredients are just combined.
  • Use the Right Sweetener: Lakanto Monk Fruit is a popular choice for its natural sweetness and minimal aftertaste.
  • Cool Completely: Allow the cake to cool completely before frosting to prevent the frosting from melting.

You can use tapioca flour, arrowroot powder or corn starch as the thickening agent. The Greek yogurt gives it a creamy and thick texture. *PLEASE NOTE: this recipe is a no sugar added cake. It has a custard like texture. If you want to add sugar to the cake that’s cool too, just add 1/4 cup to the yogurt in the beginning and mix it in before adding in the eggs. I highly recommend topping with some sweet fruit like strawberries, blueberries, raspberries, blackberries or mangos. I also sprinkled on some powdered sugar. Please make sure you follow the instructions on letting the cake cool for 30 minutes and then transferring the cake to the fridge to set and chill for at least 2 hours. If you skip this step, the cake will taste eggy. Next, remove the cake 15 minutes prior to serving to let it come to room temperature to slice and serve.

Ingredients

  • Greek yogurt
  • eggs
  • tapioca flour, arrowroot powder or corn starch

Instructions

  1. Preheat your oven to 350° F. Spray your 6 inch round spring form pan with oil and then line it with parchment paper.
  2. To a large bowl add the yogurt and then whisk in your eggs.
  3. Once that batter is silky smooth, next sift in your cornstarch (or tapioca flour) and whisk until incorporated and the batter is smooth.
  4. Transfer the batter to your prepped pan and bake for 1 hour or until the top is puffed up and is golden brown.
  5. Remove from oven and within a minute the top will deflate - that's what we want.
  6. Let it cool for 30 minutes and then transfer the cake to the fridge. Don't remove it from the pan during this process.
  7. Cool in the fridge for at least 2 hours to set.
  8. Remove the cake from the fridge 15 minutes prior to serving.
  9. Optional and Recommended: Top with some berries, honey, powdered sugar, shaved chocolate or fruit compote since there is no sugar added to the recipe.
