Ingredients:

  • 2 tablespoons butter, divided
  • 2 tablespoons sugar-free sweetener, divided

Instructions

  2. Add 1 tablespoon of the sweetener and stir to thoroughly combine.

  4. Stir in the almond flour, making sure it is completely mixed in.
  5. Grease two microwave safe coffee mugs (or ramekins) that are at least 8 ounces each.
  6. Divide the batter evenly between the mugs and smooth the top.
  7. Place both mugs in the microwave and cook for 1 minute and 30 seconds on HIGH if using a 1200 watt microwave.

Cinnamon “sugar”

  1. Make this first so that you can sprinkle it into the middle of the batter as well as on the top.
  2. In a small bowl, whisk together sweetener and cinnamon for the topping.

Mug Cakes

  1. In a medium bowl, whisk together the almond flour, coconut flour, sweetener, cinnamon, baking soda, cream of tartar, and salt.
  2. Add the egg, butter, whipping cream, and vanilla extract and stir until well combined. If your batter is overly thick, add water, 1 tsp at a time. It should be just barely pourable.
  3. Divide half the batter between two coffee mugs or ramekins. Sprinkle with half of the topping mixture.
  4. Divide the remaining batter between mugs and sprinkle with the remaining topping mixture.
  5. Cook on high in microwave for 1 to 2 minutes, until puffed and just barely cooked through.
  6. Remove and let cool 5 minutes. Serve warm with lightly sweetened whipped cream, if desired.
