It will create all around heat so the cheese melts before the mayo burns. Leave on until cheese is melted; remove pan from heat (so the cheese doesn’t burn to the bottom while you are mixing it) and mix the chesee in well. Transfer to a ceramic or glass container immediately so as not to have a sticky mess of a pan to clean up after. It’s seriously amazing.
