Ingredients:

  • Sirloin steak (or your preferred cut)
  • Salted butter, softened
  • Fresh garlic, minced
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Trim the excess fat off the steak and dice into 1.5 inch cubes. Season with salt and pepper.
  2. Mix the garlic and softened butter together in a bowl.
  3. Heat 2 tbsp of garlic butter in a large non-stick frying pan or cast iron skillet.
  4. Add the steak in a single layer. Cook on high till browned, approx. 2 minutes. Resist the urge to turn, turn only once browned.
  5. Turn until all sides are browned or cooked through to your liking, approx. another 2 minutes.
  6. Work in batches in the pan, adding garlic butter each time.
  7. Toss through the parsley to serve.

  6. Put it together: Add the meat and any accumulated juices back into the pan. Stir in the sauce and cook until thickened. Season to taste with salt and pepper (and more chili garlic sauce if you like!).
  7. Sprinkle with toasted sesame seeds before serving.

I used a technique called velveting, whereby you toss the meat with baking soda to tenderize it prior to cooking. This is a common step in many traditional Chinese recipes.

Even with velveting, you still want to make sure to slice the steak very thinly. This is easiest to do when the steak is partially frozen. It shouldn’t be rock solid, but it shouldn’t give completely as you try to slice it. Sear the steak in batches. This allows for more even cooking and you can make sure each piece cooks through perfectly. Again, this takes a but more time but makes a world of difference to the texture and flavor. If your sauce is thin after you have cooked it for a bit, push all of the meat and vegetables to one side of the pan. Whisk another quarter teaspoon of glucomannan or xanthan gum into the sauce. It should thicken up quickly.

Instant Pot Keto Steak Bites: Hands-Off Cooking

Instant Pot garlic butter steak bites is a recipe that’s easy to make and packed with flavor. Tender cuts of beef cooks in a a homemade, garlicky butter sauce. Cooking steak bites in the Instant Pot mean this tasty meal is done in a fraction of the time. This version of steak bites is different than stove-top recipes. The main difference is the amount of liquid. In both instances, there will be more sauce than a stove-top version. That’s because in order for the Instant Pot to pressurize it needs a minimum of one cup of liquid & with a slow cooker there’s nowhere for liquid to evaporate. The end result is over a cup of a delicious garlic butter sauce.

Ingredients:

  • Sirloin steak, cubed
  • Ghee or butter
  • Onion, chopped
  • Mushrooms, sliced (optional)
  • Steak seasoning
  • Chicken broth
  • Arrowroot starch (for thickening)

Instructions:

  1. Set Instant Pot to the sauté setting. When hot, add ghee/butter & the beef. Cook a few minutes until the beef starts to brown.
  2. Stir in onion and mushrooms (if using). Cook a 2-3 minutes, or until mushrooms are soft.
  3. Turn off the pressure cooker. Add the steak seasoning and 1 cup of broth. Stir to mix well.
  4. Close lid and seal valve. Set high pressure and cook for 9 minutes.
  5. Let pressure release naturally for 10 minutes before sliding or pressing the nob to vent remaining pressure.
  6. (Optional) Thicken the sauce: When cook time has completed, pour your slurry into the pot and stir. It should start to thicken within a few minutes.

Keto Swiss Steak: Comfort Food Reimagined

Dad’s keto Swiss steak is a dish I created for my husband. Cube steak is steak which has been pounded and tenderized. It is given the name cube steak because of the cube shaped indentations left in the meat after it is pounded with a meat mallet/tenderizer.

Ingredients:

  • Cube steak
  • Almond flour
  • Avocado oil
  • Onion, sliced
  • Pepper, sliced
  • Garlic, minced
  • Tomato paste
  • Diced tomatoes
  • Water
  • Worcestershire sauce
  • Lemon juice
  • Brown sugar substitute
  • Dry mustard
  • Smoked paprika
  • Salt and pepper to taste

Instructions:

  1. Pre-heat oven to 350 degrees.
  2. In a large skillet over medium heat, add avocado oil.
  3. While skillet is heating, combine almond flour, salt, and pepper in a large resealable bag. Add cube steaks and shake to combine until cube steaks are fully coated.
  4. Add cube steaks to the pan. Fry for 2-3 minutes or until just browned. Flip and fry on the other side for 2-3 minutes more.
  5. Remove cube steaks and place into an 11x7 inch baking dish.
  6. Over medium heat, saute onion and pepper in the same skillet until starting to soften, 2-3 minutes. Add garlic during the last minute.
  7. Add tomato paste, diced tomatoes, water, Worcestershire sauce, lemon juice, brown sugar, dry mustard, and smoked paprika. Stir to combine.
  8. Increase heat to medium high and bring to a boil. Decrease heat to medium and simmer for 5 minutes.
  9. Pour tomato mixture over cube steaks. Cover with foil and bake for 20 minutes.

Slow Cooker Option

This would make a terrific crockpot dish. Simply fry the steaks and place them in the bottom of a crockpot sprayed with avocado oil. Sauté the onion, pepper, and garlic. Place on top of steaks. Combine the remaining ingredients and pour over the steaks. Slow cook on low for 6-8 hours.
