Keto Slow Cooker Pork Roast
This Keto Slow Cooker Pork Roast is a simple but tasty low carb dinner option that you can set and forget! I love keto crock pot recipes. They are so simple, save me so much time, and always come out delicious and full of flavor.
Ingredients
- Pork butt (boneless)
- Chicken broth (or your preferred broth)
- Butter
- Salt and pepper
- Optional: Cream cheese, heavy whipping cream, Xanthan Gum (for thickening sauce)
Instructions
- Liberally salt and pepper pork roast.
- In a hot cast-iron skillet melt ½ a stick of butter and sear roast on all sides.
- Add the pork roast and the leftover butter and bits from the bottom of the skillet to a slow cooker.
- Add all of the other ingredients and slow cook on low for 9-10 hours or high 6-7 hours or until the roast falls apart.
- Shred with two forks then add back to your slow cooker for 30 minutes to an hour on high.
Tips and Variations
- Choosing your pork: For this low carb pork roast, I used a boneless pork butt because it always yields a super flavorful and juicy pork. There are a few different pork options you can slow roast instead of pork butt. Just keep in mind that when choosing your cut of meat, don’t shy away from those covered in fat. The fat will help keep the pork nice and juicy while adding a ton of flavor. You can also use pork loin (aka tenderloin), but keep in mind that it will not give you the same juicy results.
- Thickening the sauce: The juices that result from slow cooking adds lots of flavor and moisture to your pork. If you want it thicker and more gravy-like, add an ounce of cream cheese, 3 TB heavy whipping cream, and approx 1/4 tsp of Xanthan Gum. Then simmer on medium heat until it reaches desired consistency. You can always add more xanthan gum, but only 1/4 tsp at a time as it can yield a slimy texture if you use too much. (Xanthan Gum is a keto-friendly thickener).
- Make ahead: This pork roast can be made in advance and stored in the fridge for 3-4 days in a sealed container.
Keto Pork Chops & Veggies Sheet Pan
A weeknight meal that tastes delicious yet requires minimal preparation and clean-up? This recipe is high in protein, low in carbs, and nutrient-rich with plenty of colorful vegetables. Ingredients
- Pork chops
- Mushrooms (cremini, oyster, or button)
- Cherry tomatoes
- Red onion
- Lemon
- Olive oil
- Dijon mustard
- Minced garlic
- Rosemary
- Thyme
- Lemon zest
- Salt and pepper
- Spring mix
Instructions
- Measure out and prepare all the ingredients.
- Preheat oven to 425F.
- Line a baking sheet with parchment paper.
- Put the pork chops, mushrooms, cherry tomatoes, and red onion on top of the parchment paper lined baking sheet.
- Slice a lemon and add lemon slices.
- Season with salt and pepper to taste.
- In a glass bowl, add olive oil, dijon mustard, minced garlic, rosemary, thyme, and lemon zest. Stir this together well.
- Using a brush, brush this mixture on top of the pork chops (both sides) and sprinkle the rest of the vegetables with this.
- Bake this in the oven for 40 minutes or until pork chops are 165F internal temperature.
- Mix lemon juice with olive oil (+ any pan drippings).
- Toss the spring mix with the lemon juice and olive oil.
- Serve the pork chops and veggies with the side of spring mix.
Keto Pork Stir Fry
This keto pork stir fry is made with a lean pork tenderloin, is ready in under 30 minutes, and comes in at just 3 net carbs.
Ingredients
- 2 Tablespoons extra virgin olive oil
- 1. 5 lbs. pork tenderloin
- 1 medium red bell pepper
- ½ teaspoon ground ginger
- ⅓ cup raw cashews
- ½ teaspoon garlic powder
- 1 baby Bok choy
- 2 Tablespoons soy sauce
- 3 Tablespoons toasted sesame oil
Instructions
- Heat the olive oil in a wok or a large frying pan with high sides over medium-high heat.
- Add the pork and cook, stirring occasionally, until the pork is nicely browned on all sides, around 3-4 minutes.
- Add bell pepper, ginger, cashews and garlic powder.
- Stir fry the veggies until they become crisp-tender, around 2-3 minutes.
- Add the bok choy, sesame oil, and soy sauce.
- Continue to stir fry until the bok choy wilts and the other ingredients are coated, approximately 1-2 minutes.
- Remove from heat and transfer to individual serving plates.
Tips and Variations
- Pork tenderloin: The tenderloin is a thin and lean cut of pork. If you find yourself stumped in the meat aisle at the grocery store, just remember that a pork tenderloin is different than a pork loin. A pork loin is more like a Sunday roast - it’s larger.
- Red bell pepper: The red peppers have tons of vitamin C in them, making them ideal for this recipe.
- Cashews: These nuts add a nice flavor component and they’re a little, well - nutty!
- Bok choy: The lower part is a little crunchy - think of celery but better - and the leaves cook up tender and chewy.
- Serving: Serve over keto cauliflower rice, plain cauliflower rice or low carb noodles.
- Is soy sauce keto? It is indeed okay for a keto diet.
Keto Roast Pork Shoulder and Vegetables
Ingredients
- Pork shoulder (fat-side-up)
- Onion
- Garlic
- Tomatoes
- Mushrooms
- Fat/oil
- Basil
- Salt
- Black pepper
- Butter
- Chives
Instructions
- Preheat oven to 275°F.
- Toss onion, garlic, tomatoes and mushrooms in a large Dutch oven (or similarly large, oven-proof pot) and add the fat/oil, basil, salt and black pepper.
- Push veggies to the sides of the pot and lay in pork shoulder (fat-side-up).
- Remove from oven and transfer pork shoulder to sheet tray, piece by piece, using tongs.
- Reduce cooking juices over medium-high heat for 15 minutes until thickened (keep a close eye on it and stir frequently so it doesn’t scorch/burn on the bottom).
- Stir in butter and chives.
- Roughly shred pork then return to the pot with cooking juices.

- Pork tenderloin
- Olive oil
- Red wine vinegar
- Garlic
- Italian seasoning
- Salt + pepper
- Vegetables of your choice
Instructions
- Preheat your oven to 425ºF with the oven rack in the middle.
- Line a rimmed baking sheet with parchment (for easy cleanup).
- In a large measuring cup, combine the olive oil, red wine vinegar, garlic, italian seasoning, salt + pepper. Whisk to combine.
- Place the pork tenderloin in a bowl or ziptop bag. Pour in ½ the marinade. Marinade for at least 30 minutes, or up to 2 days.
- Toss all the vegetables in the remaining italian marinade. Spread on the baking sheet.
- Place the pork tenderloins down the center.
- Roast for 20-25 minutes, until the pork has an internal temperature of 140ºF.
Meal Prep Instructions:
Store in a meal prep container for up to 5 days in the refrigerator.
HEATING:
Either microwave until warm, about 3-5 minutes (I like to sprinkle in a little water to help it steam and prevent it from drying out).

- One of the many things that I love about pork tenderloin is that you don’t have to wait for it all day to cook.
- If you are looking to adapt cooking temperatures, a good rule of thumb is to cook pork tenderloin 25 minutes for each pound when cooking at a temperature of 325 degrees.
- Searing the pork tenderloin first provides additional flavor to the cut of the meat and provides a beautifully caramelized coating to the tenderloin. Just throw your pork tenderloin in the skillet for just a few moments and then transfer it in a pan in the oven.
Spicing Up Your Pork Roast
Making a roast makes cooking dinner so easy. It is one of those meals that you can get done on your own time and then let the heat do its work. Then, when dinner hits the table, nobody can complain about this delicious looking meal you prepared. Trust me, this recipe is just perfect. But, I do know that everybody has different tastes.

Rosemary
This pork roast utilizes rosemary, a herb that just isn’t for everyone. Rub the pork loin all over with olive oil and sprinkle with salt, pepper, and paprika. Bake in the oven for 1 hour. Remove from oven when its internal temperature of the pork loin reaches 145 F (63 C).
