Instructions
- Preheat oven to 175 °C/ 350 °F (fan assisted), or 195 °C/ 380 °F (conventional).
- Make Martina’s Keto Sourdough Baguettes (substituting almond milk and lemon juice mixed together for the buttermilk).
- Once you reach Step 4, instead of forming the baguettes onto a baking tray, shape them into balls instead. This dough can be a bit sticky to handler, so wet your hands to form the balls. You can make 9 large balls, or easily double that number with smaller balls.
- Mix the garlic and melted butter together in one bowl and the herbs in another.
- Mix the cheeses together in a third bowl.
- Roll each ball first in the garlic butter mix and then in the cheese mixture until thoroughly coated.
- Place the balls in a circular pattern in your pan.
- Bake for 10 minutes and then reduce the oven to 150 °C/ 300 °F (fan assisted), or 170 °C/ 340 °F (conventional) and bake for a further 45 minutes.
- When done, remove from the oven and let the bread cool down for 5 minutes.
- To prevent the bread from getting moist, don't leave it in the skillet. Instead, place on a cooling rack.

- Scallions

- Simply Organic Black Pepper, Medium Grind
Instructions
- Into a bowl add the Mozzarella Cheese and the Butter. Place into ta microwave oven on high for 2 minutes, or until melted and gooey. Set aside.
- Next into a large bowl add your Instant Dry Yeast and Stevia. Pour over Water and mix well until it starts to bubble and foam, and just leave to stand for 1 minute.
- Next add in the Almond Flour, Baking Powder and Salt and then just using a butter knife, start to gently mix everything together. You’ll end up with is a sticky, thick dough.
- Now add the Xanthan Gum to help bind everything together and finally add the Eggland's Best Classic Eggs and the melted mozzarella butter mix. Mix well - the mixture will be sticky so if you use your hands, make sure to wet them first. You can also use a stand mixer.
- After mixing, you should end up with a sticky, uniform dough. Leave the dough to proof and rise for 30 minutes in a warm area, it should double in volume.
- Once the 30 minutes is almost up, preheat the oven to 350 degrees F (175 degrees C).
- While you are waiting let's get started on the filling. Into a bowl add Scallions, Fresh Chives, Cheddar Cheese, and Garlic. Season with Salt and Simply Organic Black Pepper, Medium Grind and give everything a good mix around.
- The dough has now doubled in size, so take it out and place it on a baking tray lined with baking paper. Using a wet spatula, flatten out the dough until you have a square around 1/2 cm thick. Make sure you leave sides of the paper at each end to help with rolling the dough.
- Scatter over the cheese and onion mixture to all sides and carefully begin to roll up. Use the paper to assist you and also the wet spatula to help untuck any stuck areas. Place in the middle of the parchment seam-side down.
- Once you’ve rolled it up into a log shape making sure it's nice and tightly wrapped up, take scissors and cut diagonally across the log, this will make it easier to pull apart when baked.

- Yogurt Alternatives: You could use sour cream in place of the Greek yogurt. Coconut yoghurt would also work - i.e., yogurt made FROM coconuts, such as by the Coconut Collaborative.
- Protein powder Alternatives: The best substitute for whey protein powder is egg white protein powder.
- Storage: Store these rolls in an airtight container in the fridge for up to 5 days. You can also freeze them for up to 3 months! If freezing, slice them in half first.
