Ingredients:

  • Pork Loin Roast (3-4 pound)
  • Avocado Oil
  • Garlic
  • Rosemary
  • White Wine or Chicken Broth
  • Dijon Mustard
  • Salt and Pepper

Instructions:

  1. Season the Pork: Season the pork loin all over with salt and pepper. Liberally salt and pepper pork roast.
  2. Brown the Meat: In a large skillet over medium-high heat, heat the avocado oil until shimmering. Add the pork roast and brown on all sides, particularly any fatty sections. One of the biggest limitations of slow cookers and crock pots is the lack of browning for meats. For some recipes, this is okay. But for this slow cooker pork loin, you really want to brown the meat first, searing the fat at a fairly high temperature.
  3. Sauté Aromatics: Add the garlic to the pan and cook until fragrant, about 30 seconds. Add the rosemary and stir to combine. You could just dump these in on top of the roast once you transfer it, but I recommend sautéing them in the juices released by the roast first.
  4. Deglaze the Pan: Stir in the white wine and scrape up any browned bits, then bring to a simmer. A little wine or chicken broth added to the hot pan helps get up all the little bits.
  5. Add Dijon Mustard: Whisk in the mustard until well combined. Did you know that Dijon mustard is an emulsifier?
  6. Slow Cook: Place the browned pork loin in a slow cooker (5 quarts or larger). Pour the pan juices over the pork loin and set the slow cooker on high for 3 to 4 hours, or low for 6 to 8 hours. The internal temperature of the pork should reach at least 145F. You can cook this pork loin roast on either high or low. The most important part is that you get it to an internal temperature of 145F.
  7. Serve: Slice the pork thinly and drizzle with the sauce at the bottom of the pot. If you want your sauce a bit thicker, try whisking in about 1/4 to 1/2 tsp of glucomannan. You can also give the pork loin a last minute browning under your broiler (no more than about 2 to 4 minutes) if you like.

Keto Slow Cooker Pulled Pork Recipe

Ingredients:

  • 4 lb pork butt, (also known as boston butt.
  • Kosher salt
  • Paprika, Cumin, Oregano
  • Black Pepper
  • Yellow Onion
  • Garlic (or use garlic powder in the spice rub)
  • Avocado Oil
  • Chicken broth

Instructions:

  1. Place all of the seasonings in a small bowl and mix well to make the spice rub. Place pork in the slow cooker. Massage the spice rub all over the meat. You may have some left over if you have a smaller cut of meat. If you have the time, cover and refrigerate the meat for 3 hours or as long as 24 to let the rub set in.
  2. Add chopped onions and garlic to the bottom of the crock pot.
  3. Cut the pork shoulder roast into large chunks. Completely coat the pork pieces with the spice mixture.
  4. Add avocado oil to a large skillet and heat over medium-high heat. Brown each piece of seasoned pork on all sides. A dark browned color gives the pulled pork more depth of flavor.
  5. Add the browned pork pieces into the crockpot with the onions and garlic. Slow cook the pork on the low setting for 4 hours. The pork should easily fall apart when pierced with a fork.
  6. Remove the chunks of pork from the slow cooker and shred it using two forks. When I am doing this, I remove the larger chunks of fat. This is optional and dependent on how thick the fat cap is on your pork shoulder.
  7. Optionally, skim the excess fat from the liquid in the crockpot. Put the pork back into the liquid and mix it to coat the pork in the flavorful broth.
  8. When you're ready to cook, pour the chicken broth into the slow cooker and cook on low for 8-10 hours. Shred with two forks or tongs and serve. You can spoon some of the juices from the slow cooker on to the pork for serving.

There are a few different pork options you can slow roast instead of pork butt. Just keep in mind that when choosing your cut of meat, don’t shy away from those covered in fat. The fat will help keep the pork nice and juicy while adding a ton of flavor.

  • Pork Butt: This cut of meat is a preference for this recipe.
  • Pork Loin (aka tenderloin): You can also use pork loin (aka tenderloin), but keep in mind that it will not give you the same juicy results.

  • Browning the Meat: Brown the meat before slow cooking to sear the fat at a fairly high temperature.
  • Thickening the Sauce: The juices that result from slow cooking adds lots of flavor and moisture to your pork. If you want it thicker and more gravy-like, add an ounce of cream cheese, 3 TB heavy whipping cream, and approx 1/4 tsp of Xanthan Gum. Then simmer on medium heat until it reaches desired consistency. You can always add more xanthan gum, but only 1/4 tsp at a time as it can yield a slimy texture if you use too much. (Xanthan Gum is a keto-friendly thickener).
  • Broth Choice: Choose whichever broth you prefer and have on hand.
  • Spice Rub: If you are planning ahead, I recommend letting the rub set in. If you don't have the time, just season the pork and start cooking.

  • Pork Loin Roast (4.5 pounds)
  • Bacon slices

Instructions:

  1. Place the pork loin in the slow cooker. pour half of the BBQ sauce on top.
  2. Lie the bacon slices on top, tucking the excess under if necessary.

Mississippi Pork Roast is juicy, fork tender pork that’s slow cooked in Au Jus and ranch seasoning with pepperoncini for unbelievable flavor!

Ingredients:

  • Pork Roast - You’re going to need a 3 to 4 pound roast for this recipe. Either a pork shoulder or pork butt will work, they’re basically the same thing!
  • Seasoning - This Mississippi pork roast recipe is all about the flavor! A good part of that flavor will come from adding in a packet of Au Jus seasoning and a packet of dry ranch seasoning.
  • Jarred Pepperoncini - This final ingredient adds just as much flavor if not more than the packets of seasoning. You can use either the whole pepperoncini or the sliced kind! Either way, definitely keep some of the juice from the jar that it comes in.
  • Butter

Instructions:

  1. Add the pork roast to a crockpot and sprinkle with the seasoning packets.
  2. Place pats of butter over the pork roast.
  3. Arrange the peppers around the roast and add ¼ cup of juice from the jar of pepperoncini to the slow cooker.
  4. Cover and cook on high for 4-6 hours or low for 8-10 hours or until the pork roast shreds apart easily.

  • Be sure to use a packet of ranch seasoning and not ranch dip!
  • The pork will release juices as it cooks, so you don’t need to add very much liquid to the crockpot.
  • If your roast is tough, you’ll just want to cook it for longer.
