  • Orange Juice: Yes, this recipe uses orange juice. No, it’s not enough to raise the carb count appreciably. Yes, it’s still keto.

  • Food Coloring: To achieve a pretty orange color, use just a little a natural food coloring.

Instructions

  1. Prepare the Crust: Lightly grease a 9x9 inch baking pan. In a medium bowl, whisk together the almond flour, sweetener, and salt. Stir in the melted butter until the mixture begins to clump together. Turn out into the prepared baking pan and press firmly and evenly into the bottom. Use a flat-bottomed glass or measuring cup to even it out as much as possible. Freeze while making the filling.
  2. Make the Creamsicle Filling: Pour the juice into a microwave-safe bowl and sprinkle with the gelatin. Heat on high for about 20 to 30 seconds, and stir to dissolve the gelatin. Let cool to lukewarm. In a large bowl, beat the cream cheese until smooth, then beat in the sweetener, orange zest, vanilla extract, and orange extract. Slowly drizzle in the orange juice/gelatin mixture with the beaters running. Beat in just enough natural food coloring to achieve a light orange color. Pour the mixture over the crust and spread evenly with an offset spatula.
  3. Chill: Chill until firm, 3 to 4 hours.

  • Vegan: Use the Natural Simply Delish Jel Dessert brand which is gelatin free & vegan. Then you can replace the heavy cream with coconut cream and replace the yogurt with coconut yogurt.

  • Removal: It is best to run the mold under warm water to loosen the popsicles from the mold before pulling them out. They can be left on the counter to defrost for a few minutes before pulling out of the molds.

Instructions

  1. Add the contents of the sugar free orange gelatin package to the ⅓ cup cold water and whisk until dissolved. Set aside.
  2. Boil ⅓ cup water in a sauce pan. Once water is boiling, remove from heat and add the cold water gelatin mixture to the boiled water. Whisk until completely mixed and dissolved. Set aside.
  3. Add the 1 cup heavy cream, orange gelatin water mixture, and 1 teaspoon vanilla extract to a blender or processor. Pulse until thoroughly mixed. Set aside.
  4. In a medium size mixing bowl combine: ⅓ cup yogurt, ¼ cup heavy cream, 2 ½ tablespoon low carb powdered sweetener, and ¼ teaspoon vanilla extract. Whisk until smooth and creamy.
  5. To 6 popsicle molds pour a small amount of the orange mixture to the bottom of each mold. Spoon a tablespoon of the vanilla cream mixture to each popsicle mold. Then pour a small amount of orange mixture to the molds. Repeat layers until molds are almost full.
  6. Place mold sticks or popsicle sticks into molds and freeze for 5 to 8 hours or until solid.
  7. Run popsicle molds under warm water to loosen mold from the popsicle before pulling the popsicles out of the molds. Serve.

This recipe uses full-fat coconut milk as a base for a creamy texture.

Key Ingredients and Considerations

  • Coconut Milk: You absolutely NEED to use full fat coconut milk here for optimum creaminess (without any coconut after taste!). Alternatively, feel free to use heavy cream and for 'lighter versions' you can use a lower-fat coconut milk (at the expense of a bit of iciness).
  • Sweetener: Stick to erythritol (or pure monkfruit!), unless you want soft popsicles!
  • Orange Zest: The "orange taste" here really comes from the zest, but adding a tad of the juice adds a bit of acidity and a little extra zang for the taste buds.
  • Turmeric: Turmeric is optional as it largely serves to add a touch of color (the popsicles will come out a pale orange without it).

Instructions

  1. Add coconut milk, sweetener (lower amount), orange zest, turmeric (optional, see notes) and salt to a saucepan over medium heat.
  2. Mix using an immersion blender (also helps to blend the zest) or whisk until all the solids from the coconut milk have the dissolved and the mixture is fully blended.
  3. Add 2 tablespoons of orange juice (or up to 4, to taste).
  4. Transfer to popsicle molds (or an ice cube tray!) and freeze until set.
  5. Keep in the freezer for up to three months.

Ninja Creami Keto Orange Creamsicle Ice Cream

This recipe utilizes the Ninja Creami machine to create a creamy, low-carb ice cream.

Key Ingredients and Considerations

  • Almond Milk and Heavy Cream: Used for the base of this ice cream. The almond milk balances out the heaviness of the cream.
  • Orange Sugar Free Jello Mix: Necessary for texture and flavor. You can use any brand you want but the Jello is necessary. You can even play around with different flavors. You could use unflavored gelatin but you would have to use added sweetener and orange flavor.
  • Orange Extract: Used to increase the orange flavor. You could substitute with orange zest if you want.
  • IsoPure Low Carb Vanilla Protein Powder: Adds flavor, sweetness and protein. You can however use any kind of low carb protein powder you want.

Instructions

  1. Take ½ cup of almond milk pour it into a small microwave safe medium bowl. Heat in the microwave for 1 or 2 minutes until it’s hot and then add the jello mix.
  2. In a blender add the rest of the almond milk, heavy cream, protein powder and orange extract. Blend ingredients for a few seconds then add the almond milk and jello blended mixture. Blend well to combine and then pour into the Ninja Creami pint container. Place the lid on and freeze overnight.
  3. The next day take off the lid of the pint container and place it into the outer bowl assembly and attach the outer bowl lid. Place into the Ninja Creami machine and hit the Lite Ice Cream button. When done, take the outer bowl lid off and check the consistency. Chances are good you have to run it through 2-3 times until it’s nice and creamy.
  4. Place again in the outer bowl assembly and run through the machine 2-3 times until nice and creamy. I always use the Lite function when I make these low carb recipes. If it’s powdery after 2 cycles add a tablespoon of almond milk or cream and run it through again and it should be fine.
  5. When you get it to the texture you want, spoon into bowls and enjoy! When done put the lid on the container and store in the freezer. When you want to eat it again you will have to run it through the machine just like you did the first time.
