Keto Fried Pickles Recipe with Cheese: A Crunchy, Flavorful Low-Carb Snack

These cheesy keto pickle chips are an easy low-carb snack, perfect as an anytime food. This recipe requires only a few ingredients and seasonings, and it's ready in just 15 minutes!

What are Cheesy Keto Pickle Chips?

These keto pickle chips are a simple snack recipe made in a muffin pan, using shredded cheddar as a base for creating a crunchy treat, rather than using a batter. The muffin tin cooking process eliminates the need to deep fry the pickle chips. By using a bed of cheese, which is naturally low in carbs and keto-approved, inside the muffin pan, a nice crunch is created on the bottom and around the pickles. Therefore, carbs are reduced by eliminating the need to deep fry the pickle chips in a batter, which is not keto-friendly. The cheese melts and then turns crispy when cooled, similar to how keto cheese taco shells are made.

Two Ways to Make Keto Fried Pickles

There are two main ways to make keto fried pickles: as chips using cheese in a muffin tin, or using an air fryer with a breading.

Keto Pickle Chips in Cheese Muffin Pan

This method uses cheese to create a crispy base and topping for the pickles, eliminating the need for breading or frying.

Ingredients:

  • 1 ½ C. Shredded cheddar cheese
  • ½ tsp. Seasoned salt
  • ½ tsp. Onion powder
  • ½ tsp. Garlic powder
  • Sliced Dill Pickles or Wickles Pickles

Instructions:

  1. Preheat the oven to 375-400 degrees Fahrenheit.
  2. Spray a non-stick muffin pan.
  3. Sprinkle 1 teaspoon of shredded cheese into each muffin tin. Fill each muffin tin half way with shredded cheese.
  4. Place one pickle slice on top of the cheese in each muffin tin. Next top each muffin tin with a dill pickle.
  5. Sprinkle each pickle with seasoned salt, garlic powder and onion powder.
  6. Top with additional shredded cheese (about 1/2 teaspoon) and press down firmly. It won’t cover it completely and that’s okay.
  7. Sprinkle each chip with Everything bagel seasoning if using. Note: you can use any seasoning you want you you can bake them without any seasoning. I want to encourage you to try them both ways.
  8. Bake at 350-375 degrees for about 6-8 minutes, or until the edges of the cheese are dark brown and all the cheese has fully melted. I’ve noticed the silicone pans take about 3 minutes longer to get those crispy edges. These cheese should be bubbling and flat. If the cheese is not bubbling they will not turn out crispy. Be sure not to take them out of the oven too soon. If you do it will just be melted cheese and it didn’t have enough time to form a cheese crust that holds the chip together.
  9. Let cool slightly before removing from the muffin pan.
  10. Serve immediately and enjoy!

Tips:* Shred your own cheese for the best results. Pre-shredded cheese often contains potato starch as an anti-caking agent.

  • Drain the pickles well to remove excess moisture.
  • For a spicy kick, add a dash of cayenne pepper or hot sauce.
  • Change up the cheese. Shred your own cheese. Shredded cheese is great for convenience but it is coated to make it not stick together when in the package. Shredding your own cheese is easy and is the best way to go for shredded cheese.
  • Drain the pickles. I find it best to drain the pickles a little bit before putting them in the muffin tin.
  • Lower the carbs. You can lower the carb amount by adding less onion powder and season salt.
  • Add some spice. If you want a little bit of a kick feel free to add a dash of cayenne pepper. You could also add a dash of hot sauce to make them have a little spice.

Keto Fried Pickles in Air Fryer

This method uses a low-carb breading and air frying to achieve a crispy texture without deep frying.

Ingredients:

  • Pickle slices (dill or sour)
  • 1 large egg, beaten
  • ½ C Almond flour
  • ¼ C Grated Parmesan cheese
  • ½ tsp Garlic powder
  • ½ tsp Onion powder
  • ¼ tsp Salt
  • Avocado oil spray

Instructions:

  1. Drain the pickles and pat them dry with a paper towel to remove as much moisture as possible.
  2. Add the egg to a shallow bowl and whisk well until smooth.
  3. Add the almond flour, Parmesan, garlic powder, onion powder, and salt to a shallow bowl and stir to combine.
  4. Dip the pickles first into the egg and then into the almond flour mixture. Press the flour mixture onto the pickles to help it stick.
  5. Place the breaded pickles in a single layer in a greased air fryer basket and spritz with oil spray. You may need to work in batches.
  6. Air fry at 400 degrees for about 10 minutes or until crispy and browned.
  7. If working in batches, keep the first batch on a plate, uncovered while making the second batch.
  8. Serve immediately with your favorite keto-friendly dipping sauce.

Serving and Storing

These keto cheese pickle chips are best served warm, right after they come out of the oven. They are the best flavor wise and texture wise when they are served warm. The cheese crisps up in the muffin pan and gives a fried food kind of vibe. Reheating just wouldn't do them justice. If you do have any leftover, you can store them in an airtight container in the fridge for up to 3 days. To reheat the oven baked dill pickle slices, simply place them in your toaster oven or air fryer for a few minutes to crisp them back up. Cooking time will vary depending on which method you choose to use, but should not take longer than a couple minutes.

Dipping Sauces

While these pickle chips are delicious on their own, a dipping sauce can enhance the flavor. Ranch dressing is a classic choice, but fry sauce (made with mayo and sugar-free ketchup) is also a great option. When you are selecting the brand of pickles to use be sure to check the ingredient list as some brands add sugar and other non-keto friendly ingredients for the brining. For a large dill pickle, there are 4g carbs, for this recipe you will want to use dill pickle slices or sour pickles that have the lowest carb count for pickles.
