Ingredients:
- Heavy cream
- Cream cheese
- Mascarpone
- Swerve confectioners
- Vanilla extract
- Strawberries
- Blueberries
Instructions:
- With a hand mixer, whip the heavy cream in a bowl to soft peaks.
- In a separate bowl, add the cream cheese and mix until blended well.
- Mix in the Mascarpone, Swerve confectioners, and vanilla extract.
- Add a layer of chopped strawberries to the bottom of a dessert glass.
- Pipe or dollop the cheesecake mousse over the strawberries, then add some blueberries over the top.
Serving Suggestions:
- Small dessert cup, using the strawberries to form a star and one blueberry in the center.
- Piping the cheesecake mousse over the top of a cut strawberry. Add a blueberry on top for adorable mini dessert bites.

Mascarpone has 50% fat content making it a perfect ingredient for those on Keto or low carb diets where healthy fats are a focus.
Cream Cheese: The American Alternative
Cream Cheese is an American cheese made from milk, cream, and a stabilizer called carrageenan. It has a 33% fat content but because of the way cream cheese is processed, there’re a few carbs in it, about 1 gram per tablespoon. To make this easy keto fruit pizza we’re making a quick low-carb sugar cookie base and using a classic full-fat cream cheese frosting made low-carb with erythritol-based sweetener and topping it off with fresh strawberries and blueberries. You could also use raspberries or blackberries.
Ingredients:
Cookie Base:
- 1 cup almond flour (100 g/ 3.5 oz)
- 1/3 cup coconut flour (40 g/ 1.4 oz)
- 1/3 cup powdered Erythritol or Swerve (53 g/ 1.9 oz)
- 1/2 cup unsalted butter, softened (114 g/ 4 oz)
- 1/4 tsp baking powder
- 2 tsp sugar-free vanilla extract
- 1 large egg
Icing:
- 1/4 cup full-fat cream cheese, softened (60 g/ 2.1 oz)
- 2 tbsp unsalted butter, softened (28 g/ 1 oz)
- 1/4 cup powdered Erythritol or Swerve (40 g/ 1.4 oz)
- 1 tsp sugar-free vanilla extract (4 g/ 0.15 oz)
- 1/2 cup heavy whipping cream (120 g/ 4.2 oz)
Toppings:
- 1 cup sliced strawberries (165 g/ 5.8 oz)
- 2/3 cup blueberries (100 g/ 3.5 oz)
Instructions:
- Preheat oven to 175 °C/ 350 °F (conventional) or 155 °C/ 310 °F (fan assisted) and line a large baking sheet with parchment paper.
- In a medium bowl beat together the icing ingredients until smooth or use a blender to combine.
- Top with sliced strawberries and blueberries.
Keto Mug Cake Trifle
While most 4th of July desserts are packed with sugar and carbs, this keto dessert is a refreshing alternative for those who are avoiding carbs. You can make this dessert in a large trifle bowl to serve to a crowd, or keep it small in individual cups.
Ingredients:
- Egg
- Almond milk
- Heavy cream
- Vanilla extract
- Coconut flour
- Baking powder
- Sugar substitute (allulose, Swerve, monkfruit, erythritol or xylitol)
- Blueberries
- Strawberries
Instructions:
- To make the cake, lightly grease a large mug or ramekin (at least 16oz).
- Whisk the egg, almond milk, cream, and vanilla together in a bowl.
- Add the coconut flour, baking powder and sugar substitute.
- Whisk until smooth.
- Pour into the prepared mug.
- Microwave for 90 seconds on high.
- Cool completely.
- Beat the heavy cream, powdered sweetener and vanilla extract together in a bowl until stiff peaks form.
- To assemble the desserts, layer the blueberries and strawberries with the cake and whipped topping in 4 small cups.
Tips for the Perfect Mug Cake:
- It’s always a good idea to take the egg out of the fridge to bring it to room temp before cooking.
- Almond milk is a great substitute for high sugar milk. You could use your favorite milk substitute as well.
- The texture of the coconut flour is much finer than almond, and that leads to a cake that’s lighter and more fluffy, like a sponge cake. If you need to use almond flour instead, use 3 tablespoons of almond flour rather than just 1.
- The reason I use allulose is because it doesn’t have the cooling effect you get with erythritol. If you don’t have allulose, you can use Swerve, erythritol or xylitol. It’s really up to you which sweetener you use.
- I like using blueberries and strawberries for this dessert because they both are low in sugar, thus don’t add many carbs to the total.
Tips for Whipped Cream:
- The main reason that whipped cream doesn’t form soft peaks is that the cream wasn’t cold enough to start. You need to have very cold cream and even a chilled bowl.
- Another thing to keep in mind is that the best cream for whipping is heavy whipping cream.
