When you serve this dish, there is no need to announce it is low carb. I guarantee you noone will know if you don’t tell them. This meal is cost efficient, hearty and tastes absolutely delicious! You can change up your choice of cheeses, using Swiss, Pepper Jack or even smoked cheese. Make it your own and I guarantee, you’ll make it often!
Ingredients:
- 12 eggs
- Melted butter
- Grated cheese (cheddar, mozzarella, or your choice)
- Cottage cheese
- Baking powder
- Cornstarch (as a thickener)
- Salt and pepper
Instructions:
- Preheat oven to 350 degrees. Grease a 9 x 13 baking dish (I use butter).
- In a medium-sized bowl, crack and whisk all 12 eggs, making sure to break the yolks.
- Add in melted butter, grated cheese, cottage cheese, baking powder, cornstarch, salt, and pepper and mix together until all ingredients are well incorporated.
- Pour the egg mixture into a greased baking dish and then place into a preheated oven for approximately 35 minutes. The edges should be bubbling and the top lightly golden when done.
- Let the eggs sit for 5 minutes before slicing to eat. Garnish with chopped chives.
