Simple Keto Whipped Cream Dessert

This simple keto whipped cream dessert is ready in 5 minutes and it’s guaranteed to impress anyone. Enjoy a simple and delicious dessert that just happens to also be healthy!

Ingredients:

  • Whipped Cream:
    • 250 g full-fat sour cream (raw, unpasteurized preferred)
    • 2-3 tsp coconut sugar
    • 1/2 tsp vanilla powder
    • 1/2 tsp cinnamon powder (optional)
  • Bottom Layer:
    • 100 g frozen berries (blueberries, raspberries, cranberries, or strawberries)

Instructions:

  1. Make Whipped Cream: Ensure that your full-fat sour cream is cold. The same goes for your whisk and bowl.
  2. Add full-fat sour cream, vanilla powder, and coconut sugar into a bowl.
  3. Using a hand whisk, mix gently until the cream starts to get thicker and thicker. This is going to take about 3-4 minutes. Do not over beat! Observe if your whipped cream is solid and doesn’t fall down from the whisk. That’s when you’ll know the whipped cream is ready.
  4. Store in the fridge for a few minutes and remove before using in the dessert.
  5. Putting This Dessert Together: Using a wide glass (or cup), add frozen berries just half way through.
  6. Fill the rest with whipped cream that is cold from the fridge.
  7. Decorate with cinnamon powder, vanilla powder, and a few berries.

This dessert costs about as much as 1 fancy coffee that you would buy in the city.

This chocolate pudding recipe takes no time at all on the stovetop, and then a quick chill while you’re eating dinner, and voila! It’s so delicious on its own, and that’s how I usually serve it, or just with a spoon.

Ingredients:

  • Sugar-Free Chocolate Pudding
  • 2 Cups of Heavy Cream

Instructions:

  1. Substitute heavy whipping cream in place of the milk. Now, how many carbs are in 2 cups of heavy whipping cream? There are 6.6 carbs in 1 cup.
  2. Add 13 carbs from the cream to the 24 for the WHOLE BOX of pudding. You now have a total of 37 carbs for the ENTIRE recipe.
  3. Remember, there are 4 servings of pudding per box. Divide the 37 total grams by 4 servings, and you get what?
  4. Divide pudding into ramekins.

Tips:

  • Make the pudding ahead of time and refrigerate it for at least 2 hours before serving. Two hours is the bare minimum - 4 hours is better, and overnight is best. The pudding’s consistency greatly improves after a night in the fridge.
  • You can keep leftovers of this keto chocolate pudding, covered and refrigerated, for up to 4 days.
  • Try freezing it! This dessert is super filling (like eating fudge), so you don’t need much. I would say it makes 10 or more servings. You could literally eat a tablespoon a day to satisfy cravings.

Keto Chocolate Mousse

This recipe doesn’t use eggs or egg whites. Instead we this easy dessert without having to fuss with making a pudding or curd from eggs. The best way to satisfy a chocolate craving on the keto diet is to make this keto chocolate mousse. It only takes a few minutes to make and uses ingredients that most people have in their refrigerator or pantry.

Ingredients:

  • Heavy cream
  • Sugar free sweetener
  • Cocoa powder

Instructions:

  1. Pour heavy cream into a large bowl and beat with an electric mixer until slightly thickened.
  2. To the thickened cream, add powdered sweetener, cocoa powder, vanilla and salt.
  3. Continue beating until stiff peaks form.
  4. Chill in the refrigerator for 30-60 minutes for ultra thick and smooth mousse.

Tips and Variations:

  • Ensure the cocoa powder is 100% unsweetened.
  • For a white chocolate version, use sugar-free white chocolate chips.
  • Use coconut cream for a dairy-free alternative.

Keto Chocolate Whipped Cream

This keto chocolate whipped cream is made in the food processor. This whipped cream is easy to make and so delicious. It's a variation of my recipe for keto whipped cream. I love it as a dip for fresh strawberries. It's also excellent as frosting. But most of all, I like to eat it by itself in a dessert bowl. It's like eating a creamy, fluffy chocolate mousse!

Ingredients:

  • Heavy whipping cream
  • Vanilla extract
  • Sweetener
  • Unsweetened cocoa powder

Instructions:

  1. Place the heavy whipping cream, vanilla, sweetener, and cocoa powder in your food processor bowl.
  2. Process on high for about one minute, until the mixture magically turns into thick whipped cream.
  3. If needed, stop once to scrape the sides and bottom of the food processor bowl.
  4. Transfer the whipped cream to a bowl and serve with berries or use it to frost cakes or cupcakes.

Tips:

  • Chill the bowl and mixer attachments for 15 minutes in the freezer - heavy cream whips best when very cold.
  • You can use heavy cream without any gums or thickeners, but make sure it's labeled as "whipping" cream.
  • It's best to use Dutch-processed cocoa powder.
  • It's easy to use the food processor, but since it's so efficient, keep an eye on it and try to avoid over-whipping.

Keto Peanut Butter Mousse

It just doesn’t get any easier than this keto peanut butter mousse. It’s sweet and creamy, and takes only 5 ingredients and 5 minutes to make. How’s that for instant gratification? You could make this fresh every day, if you were so inclined!

Ingredients:

  • Cream cheese
  • Peanut butter
  • Sweetener
  • Vanilla
  • Heavy cream

Instructions:

  1. In a medium bowl, whip the 1/2 cup of cream until it holds stiff peaks. Set aside.
  2. In another medium bowl, beat together the cream cheese and peanut butter until smooth and creamy.
  3. Add the sweetener and vanilla. If your peanut butter is unsalted, add a pinch of salt as well. Beat until smooth.
  4. If your mixture is overly thick, add about 2 tbsp heavy cream to lighten it and beat until combined.
  5. Gently fold in the whipped cream until no streaks remain.
  6. Pipe into dessert cups and serve.

Tips and Variations:

  • Use a powdered or liquid sweetener to avoid grittiness.
  • Ensure ingredients are at room temperature, except for the heavy cream.
  • For a dairy-free version, use dairy-free cream cheese and coconut cream.

Keto Whipped Cream Strawberry Dessert

Each dessert features a dusting of sugar-free chocolate and strawberries- 2 large ones per parfait to be exact!

Ingredients:

  • 1 cup Heavy whipping cream
  • 4 strawberries
  • 1/2 tsp. Stevia
  • Simply Lite Low Carb Dark Chocolate

Instructions:

  1. Add heavy whipping cream to a cold bowl with stevia and whip on high for about 3 minutes or until firm peaks form.
  2. Cut berries how you please and add them to a glass.
  3. For this dessert I only use half of one square between both desserts to create a light dusting.
