Keto Crack Chicken Soup

This recipe is a creamy, cheesy, and bacon-filled delight that's sure to become a family favorite. If a recipe has "crack" in the title it means that the recipe has cheddar, bacon, and ranch in the ingredients. It all started with my Crack Dip way back in 2007. According to the dictionary, the definition of crack is “of superior excellence or ability”. We think the flavor combination of cheddar, bacon, and ranch fits this definition! This soup is SO good - you’ll never miss the carbs!

Ingredients

  • Chicken breasts (any cut of chicken can be used)
  • Low-sodium chicken bone broth
  • Cream cheese
  • Ranch dressing mix (or homemade seasoning for those sensitive to store-bought mixes)
  • Bacon
  • Shredded cheddar cheese
  • Salt and black pepper to taste

Instructions

  1. Place chicken breasts in a 6-quart slow cooker.
  2. Add low-sodium chicken bone broth, cream cheese, a packet of ranch dressing mix, and bacon.
  3. Cover the slow cooker and cook on LOW heat for 4 to 6 hours.
  4. Remove the chicken from the slow cooker and shred it with two forks.
  5. Place the shredded chicken back in the slow cooker and add shredded cheddar cheese. Season with salt and black pepper.
  6. Let the soup cook until the cheese has melted.

Serving Suggestions

Top with extra cheese and bacon for added flavor. Serve with a simple green salad or roasted vegetables like broccoli or Brussels sprouts for a complete meal. If you aren’t doing a low-carb diet, whip up some garlic bread or breadsticks. They are perfect for dipping into the soup and soaking up all those delicious flavors.

Can I cook Crack Chicken Soup on the stovetop?

Yes! Use a whole rotisserie chicken instead of chicken breasts. Place everything except the cheddar cheese in a large Dutch oven or soup pot. Bring the soup to a boil. Reduce heat and simmer for 20 minutes.

Ingredients

  • Lean ground beef (or ground turkey, venison, or pork)
  • Beef broth (or veggie broth)
  • Cauliflower florets (fresh or frozen)
  • Shredded cheddar cheese (or any cheese of your choice)
  • Dried basil
  • Dried parsley
  • Salt and pepper to taste
  • Optional: Cooked bacon, crumbled

Instructions

  1. Cook garlic and onion in skillet with hot oil until fragrant. Add ground beef and cook until browned. Remove from heat and drain oil (if needed).
  2. Transfer cooked beef into a 4 or 6 quart crock pot. Add remaining ingredients.
  3. Stir to combine ingredients.
  4. Layer the ingredients out in the crockpot. I started out with the ground beef, followed by veggies, cheese and lastly the cauliflower.
  5. Cover and cook on low for 6-8 hours.

Variations

For a vegetarian option, swap out the ground beef for a plant-based alternative like Beyond Meat and use vegetable broth.

Serving Suggestions

Top with crumbled bacon for added flavor and texture.

Storage

The soup can be stored in the fridge for up to 4 days in an airtight container. Since this is a dairy based soup, I do not recommend freezing it. The dairy with separate from the soup and just leave you with a weird texture and flavor. If you want to meal prep it, cook all of the ingredients together and just leave out the dairy products. When you are ready to eat, heat up the soup and add of the cheese, sour cream and milk.

This could be made on the stovetop if you don't have the time to wait for the slow cooker.
