Popular and Viral Chicken Carnivore Bread

This popular and viral chicken carnivore bread is so flavorful. I don’t usually make carnivore recipes but I was very intrigued by this one and had to try it out. Unlike many other carnivore bread recipes, it doesn’t require a dozen eggs so the bread is not eggy. Instead, it uses chicken.

Ingredients

  • Ground chicken
  • Eggs
  • Baking powder: Make sure to use aluminum free baking powder because the bread does use a large amount of baking powder.
  • Parmesan cheese

Preparation

  1. Preheat oven to 350°F (177°C). Line an 8 x 4 inch baking loaf pan with parchment paper.
  2. Bring a nonstick skillet to medium heat. Add ground chicken, stirring and breaking it apart with a cooking spatula as it cooks. Keep cooking chicken until it is fully cooked.
  3. Transfer cooked chicken to a food processor. Add remaining ingredients to the food processor.
  4. Pulse on high until the ingredients are fully combined and no egg streaks remain. It's okay if the chicken is not fully smooth and leaves very small lumps in the batter. See photo in post for reference.
  5. Pour bread batter into prepared loaf pan.
  6. Bake for about 1 hour or until surface is golden brown and bread is fully cooked.
  7. Let bread cool before cutting and serving.

Tips

  • I used regular ground chicken and not ground chicken breast.
  • I did not add any oil to my pan before cooking the chicken.
  • I chose parmesan cheese because it has a strong flavor and adds more flavor to the bread.
  • The bread does not rise that high during baking.

This chicken carnivore bread is surprisingly soft, light and flavorful. It is just 4 ingredients and so easy to make. The bread has a soft and moist texture. It will not have a texture like classic bread made with flour but it does have a bread-like feel to it. It is sturdy enough to use as bread for sandwiches or it can be enjoyed on its own.

This Carnivore Flatbread is AMAZINGLY EASY to make, all without grains, nuts, or flour! Lately, I have been reading more about the carnivore diet, like this book by Paul Saladino: Carnivore Code: Unlocking the Secrets to Optimal Health by Returning to Our Ancestral Diet. This (and constantly running out of almond flour!) has motivated me to develop a keto bread recipe that is nut-free, grain-free, and nearly zero carb! After some trial and error, I have come up with this super easy Carnivore Flatbread! The preparation literally takes only 5 minutes, and you won’t need any special equipment or unusual ingredients. I love both the taste and the look of this flatbread. This Carnivore Flatbread is super versatile, and I think there is so much I will be able to use it for! I have already made an amazing Carnivore Breakfast Pizza and Keto Spinach Stromboli with this flatbread. I’m excited! This low carb, high protein and keto-friendly carnivore bread is soft and very flavorful.

Ingredients

  • Eggs
  • Greek yogurt. Use full-fat Greek yogurt.
  • Mozzarella cheese
  • Salt
  • Pepper
  • Italian seasoning if desired

Preparation

  1. Preheat oven to 415 °F.
  2. Line a large baking sheet with parchment paper.
  3. In a medium bowl, whisk up eggs.
  4. Add Greek yogurt and stir together to a smooth batter.
  5. Stir in mozzarella cheese, salt, pepper, and Italian seasoning if desired.
  6. Pour batter onto your lined baking sheet.
  7. With a spoon or spatula, spread batter into a thin oval or rectangle of about 13×11 inches. Spread it out. After you whisk together the ingredients, you will pour the batter onto your lined baking sheet. With a spoon or spatula spread the batter into a thin layer. I spread it into an oval of about 13″x11″, but you can also go for a rectangular shape. The batter will be thin, but thick enough to spread into a rectangle.
  8. Bake for 19-21 minutes until golden brown.
  9. Let flatbread cool down for 5 minutes.
  10. Cut into slices or squares for serving.

Serving

Tastes great with freshly grated parmesan, feta cheese, and/or melted butter. After baking it, let the flatbread cool for a few minutes before handling it. You can top it with melted butter, grated parmesan cheese, feta cheese, or just as is.

Cream Cheese Carnivore Bread

Preparation

Start by bringing your eggs, cream cheese, and cottage cheese to room temperature. This step helps everything blend smoothly without clumping.

  1. Preheat your oven to 350 degrees.
  2. Grease and line a 10 x 5-inch loaf pan with parchment.
  3. Finely grind your pork rinds into a fine powder or use pre-made pork panko.
  4. In a large bowl, using an electric mixer, or a standup mixer, beat together the room-temperature cream cheese and cottage cheese until well combined. Scrape the sides of the bowl a few times to make sure everything is evenly mixed.
  5. Add the pork rinds, baking powder, and sea salt to the wet mixture.
  6. Pour the batter into the prepared loaf pan, spreading it evenly.
  7. Let the bread cool for about 5 minutes in the pan before transferring it to a wire rack to finish cooling.

Store any leftovers in an airtight container in the refrigerator for up to 5 days. You can also freeze individual slices or the whole loaf for up to 3 weeks.

Indigo Nili’s Frozen Butter Trick

You can take this bread or these buns to a whole new level thanks to a technique that I have been calling Indigo Nili’s Frozen Butter Trick! Grate 1/2 stick of frozen butter and put it in the bowl on low speed at the very end of mixing the batter.

Instructions

  1. Preheat oven to 325
  2. Separate 6 egg whites into a mixing bowl, keep 3 yolks for later in the recipe and save 3 yolks for something else!
  3. Add salt, egg white powder and bone broth powder into mixing bowl.
  4. Mix on high for 3 to 5 minutes until mixture has stiff peaks.
  5. Turn mixer down to lowest speed and add 3 egg yolks one at a time, allowing a couple spins for each one to become incorporated into mixture.
  6. If using the frozen grated butter, dump that into the bowl while the mixer is on lowest speed. Stir until combined.
  7. Press mixture into a silicone loaf pan (8 x 4). If using glass or metal pan be sure to line with parchment paper. If making buns use a mesh bun pan on a rack on a large baking sheet.
  8. Bake for 15 minutes for 9 buns, 20 minutes for 6 buns or 25 minutes for bread.

NOTE 1: If using Keto Chow or any other protein powder that contains fat, be sure to add it in when adding in the egg yolks at the end. The fat could cause your batter to collapse.

NOTE 2: You can also add 1 tbsp beef gelatin for even softer fluffier bread!

NOTE 3: To make buns, bake at 325 for approximately 1520 minutes, brush with egg wash and then bake another 5-10 minutes, then remove from oven.

NOTE 4: adding frozen grated butter takes these buns to a whole new texture!

Pork Rind Bread

Ingredients

  • Eggs
  • Greek yogurt
  • Melted butter
  • Crushed pork rinds

Instructions

  1. Crush up pork rinds in a food processor or place them in a paper bag and smash them with a wooden rolling pin. Meanwhile, melt the butter in a pan on the stove.
  2. In a large mixing bowl, combine the eggs, greek yogurt, melted butter, and crushed pork rinds.
  3. Pour the mixture into the prepared loaf pan.
  4. Allow the bread to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
