Pork Rind Bread Crumbs

This is a simple recipe that I created because I wanted to make my guacamole bombs for a friend which used store-bought low carb breadcrumbs. But I was out of stock, and thought I could replace with pork rind crumbs.

Ingredients:

  • 3 oz pork rinds
  • Optional seasonings: Italian seasoning, smoked paprika, garlic powder, salt, pepper, red pepper flakes

Instructions:

  1. Place the pork rinds into a food processor or blender, and pulse until broken into fine crumbs. Alternatively, add the pork rinds to a resealable plastic bag. Using a rolling pin, crush them until a course texture remains.
  2. Put the pork rind crumbs into a mixing bowl and add the rest of the ingredients.
  3. Add your spices! You are free to add more or less of the spices than I used. If you want your breadcrumbs to have a bit of heat, add some red pepper flakes. After you are happy with the spices that you added, mix them up really well.
  4. Store them in a sealed container at room temperature. I used a glass mason jar with a lid because it keeps all the air out really well and is see-through so I can find it really easily in the pantry.

Almond Flour Bread Crumbs

Ingredients:

  • 1 cup almond flour
  • 1 tablespoon olive oil
  • 1 egg
  • 1/2 teaspoon baking powder
  • Salt and pepper to taste
  • Optional seasonings: Italian seasoning, garlic powder, onion powder

Instructions:

  1. Mix the almond flour, olive oil, egg and baking powder in a microwave safe bowl or dish. We used a 5 inch square glass dish.
  2. Microwave for 4 minutes 30 seconds until the mixture has hardened.
  3. Place the hardened almond flour mixture into a zip lock bag and gently crush into chunky crumbs by hand. Or, heat the butter in a large skillet on a medium heat and add the keto breadcrumbs.
  4. Taste and adjust seasoning.

You will, of course, need some low carb bread to make these breadcrumbs.

Ingredients:

  • 8 slices of Sola bread or other keto bread
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper

Instructions:

  1. Preheat the oven to 300F.
  2. Place 8 slices of Sola bread on a baking sheet, place into the oven on its lowest heat setting, and bake for a few hours until fully dried out and crispy. Breadcrumbs are typically made with stale bread, but if your bread isn't stale, leave it out of its container for a few hours or overnight.
  3. Break the bread up into rough pieces and place them in a food processor. Pulse until breadcrumbs have formed.
  4. Transfer the breadcrumbs to a large sealable bag, and add dried oregano, dried thyme, salt, garlic powder, and black pepper.
  5. Seal the bag and shake it to thoroughly distribute the seasonings into the crumbs. These seasoned breadcrumbs can be used in any recipe in place of regular breadcrumbs or even instead of pork rind crumbs.
