For those seeking a delightful alternative to traditional bread while adhering to a ketogenic or low-carb lifestyle, cauliflower bread emerges as a versatile and satisfying option. This article explores various cauliflower bread recipes, highlighting their unique characteristics, preparation methods, and the health benefits they offer.
The Appeal of Cauliflower Bread
Cauliflower bread stands out as an excellent substitute for conventional bread due to its significantly lower carbohydrate content. This makes it an ideal choice for individuals following keto, gluten-free, or paleo diets. Beyond its low-carb nature, cauliflower bread can be a nutrient-dense option, offering vitamins, minerals, and fiber.
Varieties of Cauliflower Bread
Basic Keto Cauliflower Bread Loaf
This recipe focuses on creating a loaf of bread that can be sliced and used much like regular bread. It often involves ricing the cauliflower, drying it thoroughly, and combining it with ingredients like almond flour, eggs, and seasonings. Whipped egg whites are often incorporated to create a lighter, airier texture.
Ingredients and Preparation
- Prepare the Cauliflower: The cauliflower is first riced using a food processor until it resembles coarse crumbs.
- Dry the Cauliflower: It is important that you properly prepare the cauliflower. This can be done by dicing it up by hand or you can use a food processor to do it for you. You then need to steam it for a couple of minutes on the stovetop or using a microwave. Once the cauliflower is cooked, dry it out using paper towels before adding it to your bread mix.
- Combine Wet and Dry Ingredients: In a bowl, combine egg yolks, butter, almond flour, baking powder, and salt. Mix together until you achieve a smooth consistency.
- Incorporate Egg Whites: In a bowl, add the egg whites. Beat with a mixer until stiff peaks form.
- Combine Mixtures: Fold the egg whites into the egg yolk mixture carefully a little bit at a time. The consistency should be fluffy.
- Bake: Pour the cauliflower dough into the bread pan. Preheat oven to 350F and line a bread pan with parchment paper. Bake for about 45-50 minutes, or until bread is done.
Cheesy Cauliflower Breadsticks
These breadsticks offer a savory, cheesy alternative to traditional garlic bread, perfect as an appetizer or side dish.
Ingredients and Preparation
- Prepare the Cauliflower: Core the head of cauliflower and cut it into florets. Throw the cauliflower florets into a food processor and pulse it until it’s the texture of rice. No need to cook the cauliflower first.
- Combine Ingredients: In a large bowl, mix the riced cauliflower, 1/2 cup shredded Mozzarella cheese, Parmesan cheese, egg, garlic, basil, parsley, salt, and pepper until combined and holds together.
- Shape and Bake: Place the cauliflower mixture onto your prepared baking sheet. Spread it out into a rectangle that's about 9-inches x 7-inches and 1/4-inch thick.
- Bake and Add Cheese: Bake for 10-12 minutes. Remove from oven and top with 3/4 cup shredded mozzarella cheese and return to oven to continue baking until the cheese is melted and starting to brown.
- Cool and Serve: Cool about 10 minutes and cut into 'breadsticks'. Garnish with fresh herbs and more Parmesan cheese.

Ingredients and Preparation
- Prepare the Cauliflower: First, either buy a bag of fresh riced cauliflower or a medium sized head of cauliflower. If starting with a head of cauliflower, remove any green parts and large knob of cauliflower. Next, using a food processor, work the cauliflower florets into rice size pieces.
- Bake the Cauliflower: Place the cauliflower pieces on a baking tray lined with parchment paper. Spread the florets thin. Bake at 350F. for 10 minutes, then stir the pieces around to ensure even cooking, and bake for an additional 10 minutes.
- Remove Moisture: Squeeze out any remaining liquid with cheese cloth. You want to get as much liquid out as possible.
- Combine and Shape: In a small bowl, beat the egg till yolk and white is mixed. Add the egg, cheese and herbs (for flavor) into the cauliflower, and stir till a paste forms. This will be your batter to make the bread.
- Bake: Place the tray in the oven and bake for 16-20 minutes till the “bread” pieces are golden brown.
Tips for Perfect Cauliflower Bread
- Proper Cauliflower Preparation: When making this recipe, it’s important that you properly prepare the cauliflower. This can be done by dicing it up by hand or you can use a food processor to do it for you. You then need to steam it for a couple of minutes on the stovetop or using a microwave.
- Remove Excess Moisture: Wring the excess moisture out of the cauliflower rice by adding a small amount to a tea towel and wringing it. Do this until all the cauliflower rice is wringed out. Remove Moisture - Do not forget this step!
- Achieve the Right Consistency: Fold the egg whites into the egg yolk mixture carefully a little bit at a time. The consistency should be fluffy.
- Experiment with Flavors: I intentionally made a plain loaf because I wanted something similar to white bread. However, you can easily make this bread more flavorful by adding other toppings like shredded cheese, fresh or dried herbs.
Serving Suggestions
As soon as it’s cooked it’s ready to serve. One idea we love is to use slices of this bread as mini pizza bases. You can also use them as sandwich bread or just a savory breakfast.
Health Benefits of Cauliflower Bread
Cauliflower is one of the most beloved veggies in keto for a reason. It’s multipurpose, low-carb, and packed with macronutrients.
- Fiber Content: The majority of the fiber in this cauliflower bread is coming from psyllium husk. Fiber has a pretty impressive impact on heart health as well.
- Sulforaphane: Cauliflower is rich in a compound called sulforaphane. You can only release sulforaphane when you chop, slice, crush, or chew the cauliflower.
- Vitamins and Minerals: Cauliflower is also a great source of vitamin C and folate[*].
- Weight Management: The fiber in almond flour and psyllium husk helps you feel full and satisfied because it adds bulk and slows down digestion.
Storage and Reheating
While my family will devour an entire batch of cauliflower breadsticks in under 10 minutes, other less indulgent people may have some leftovers. Haha. If you find yourself with some extras, just let them cool completely. Then you can pop them into a freezer-safe bag, and put them in the freezer! You can happily keep them in the fridge for 3 days. Freeze immediately after cooling from the oven. Don't allow it to sit in room temprature for a long time. Reheat in the oven at 400F for around 5 minutes, depending on the thickness of the bread.
