For those embracing a ketogenic lifestyle, finding satisfying snacks that align with dietary goals is essential. Cheese curds, with their unique texture and flavor, often come into question. This article delves into the nutritional profile of cheese curds, exploring their compatibility with a keto diet, health benefits, and creative ways to incorporate them into your low-carb meal plan.
What are Cheese Curds?
Cheese curds are essentially young cheddar cheese in its unaged form. They are the solid portions of milk that separate during the cheesemaking process. If you remember the nursery rhyme about curds and whey, then you have some base understanding of what a cheese curd actually is. These fresh curds are great for coating in bread crumbs or pork panko crumbs (for my keto followers), temporarily frozen, then air fried to perfection.
Traditionally, they're a byproduct of cheesemaking, enjoyed by the families of cheesemakers. Over time, they transitioned from a treat to a marketable product. Today, cheese curds are enjoyed in various ways, including straight from the container, deep-fried, or as a key ingredient in poutine, a popular Canadian dish.
Nutritional Profile of Cheese Curds
One ounce of cheese curds contains approximately 84 calories, primarily derived from natural fats and proteins present in milk. Specifically, one ounce provides 5.61g of fat and 6.73g of protein. In addition to these macronutrients, cheese curds offer essential minerals and vitamins similar to those found in other cheeses.
Cheese Curds and the Keto Diet
The cornerstone of a keto diet is significantly reducing carbohydrate intake to induce a metabolic state called ketosis. During ketosis, the body shifts from using glucose to burning fat for energy, producing ketones in the process.

Cheese curds are very low in carbs. This makes them the perfect fit for someone looking to keep the carb count low while getting a sufficient amount of protein. With their high-fat, moderate-protein, and low-carb composition, cheese curds can be a great addition to a ketogenic diet. They provide a satisfying snack option that aligns with the dietary restrictions of keto.
Health Benefits of Cheese Curds
Beyond their macronutrient composition, cheese curds offer several health benefits:
- Source of Protein: Cheese curds contribute to your daily protein intake, essential for muscle building and overall body function.

- Dental Health: Studies suggest that dairy products, including cheese, may help protect against tooth decay.
- Conjugated Linoleic Acid (CLA): Dairy fats in cheese contain CLA, which may help reduce inflammation and potentially prevent heart disease.
- Gut Health: Cheese curds are a fermented food, and fermented foods are known for being good for gut health.

Air Fryer Cheese Curds Recipe
Ingredients:
- 1 lb. Cheese Curds
- 2 Eggs
- 2 tbsp Water
- 1 cup Flour sub with 1:1 with gluten free flour
- 2 cups Panko Bread Crumbs (sub with pork panko or gluten free bread crumbs as needed)
- 1 tsp Sea Salt
- 1 tsp Black Pepper
- 1 tsp Garlic Powder
- 1 tsp Smoky Paprika
- Non-Stick Spray as needed
Instructions:
- In a small bowl, combine the salt, pepper, paprika, and garlic powder. Mix it together and set it aside.
- Set up three shallow bowls for dredging your cheese curds. In the first bowl, add the flour and set it aside. In the second bowl, beat the two eggs and the water together. In the third bowl, add the panko crumbs (sub with pork rind panko crumbs or gluten free crumbs if needed).
- Divide the seasoning mixture between the flour and the panko. Use a fork or whisk to season the two mixtures.
- Start by dipping your cheese curd, into the flour until dusted and coated. Then dip into the egg wash and then into the panko. Place onto a parchment paper lined baking sheet or plate. Repeat this step until all the curds are coated.
- Place them into the freezer for 45- 60 minutes. They need to be frozen before going into the air fryer (or they will melt and not gold their shape).
- Preheat your air fryer to 400 degrees F. Once preheated, add the cheese curds in an even layer into the air fryer basket. Spray the top with a non-stick spray of choice lightly and then cook for 4 minutes.
- Flip them half way over and spray lightly again on the other side and cook for another 3-4 minutes or until cooked through and golden brown.
- Remove from your air fryer and serve with your favorite sauces (I like marinara or BBQ ranch dressing). Make these keto and low carb friendly with pork rind “bread” crumbs!
